The other night I had the most amazing idea for ice cream. I’m currently obsessed with protein ice cream and one of my favorite “regular” ice cream flavors is Mint n’ Chip.
So, yesterday I went out and bought Peppermint Extract. And today… success!
Mint & Chip Protein Ice Cream:
1.5 scoops chocolate protein powder
lots of ice
1 cup milk of choice
a few drops peppermint extract (about 1/16 tsp)
1/8 tsp xantham gum (this helps thicken it)
packet sugar of your choice (added this after tasting, I needed it, you may not)
opt. handful of spinach (but this adds to the green color)
fun opt. handful chocolate chips
Blend. Top with granola. Enjoy!
In other news – Who needs Chipotle when I can raid my mom’s fridge?

I read your blog about protein ice cream. I’ve done a lot of work in this area and actually created a gelato that has 15 grams of protein and only 2.5 g fat sweetened with organic agave nectar and pure cane sugar. I created this for hospital patients, being one myself for a large part of my life, but people like it so much that it is requested daily by healthy lifestyle consumers. I’m jealous that your mom is a good substitute for Chipotle. But at least my grandparents is a good substitute for Cracker Barrel, if Cracker Barrel slipped you money on your way out the door. 🙂
