Thanks for all your thoughts on my Fat Feeling post. There is something oddly comforting about knowing you’re not the only one dealing with it.
This morning I ran a 10 miler and felt pretty good! I thought I was still tired from this weekend, but ended up getting lost in my ‘head movies’ and it flew by!
I worked through the morning and then met up with SkinnyRunner to pop some tags. We went to the GoodWill for toss-away gear for the New York City Marathon. Runners wait outside for a few hours before the race and it’s COLD! So you need extra clothes to stay warm before the marathon.
Since I am going to be ripping these off in public anyway, I felt comfortable trying them on in public too… #Classy
You may have heard I love to run and eat.
Fortunately, those things compliment each other very well! But long distance running requires fueling well – not just a lot. I wanted a treat today and whipped up these healthy cookies that could work as a pre-run snack since they have a good mix of carbs and protein without very much fat.
Pre-Run Cookies Recipe
{Low fat. Gluten Free. Pre-workout approved.}
Ingredients:
- 1 cup oat flour (I blended oats in the blender to make)
- 2 Tb. brown sugar (packed)
- 1 tsp cinnamon
- 1/2 tsp baking soda
- 1 Tb. chia seeds
- 1 egg
- 1/2 cup apple sauce
- 3 Tb. greek yogurt (plain or vanilla)
- 1/2 tsp vanilla
- 1/3 cup chocolate chips
- optional: 1/3 cup dried cranberries
Directions: Pre-heat oven to 350 degrees. Mix apple sauce, brown sugar, egg, vanilla, greek yogurt. Mix oat flour, brown sugar, cinnamon, baking soda and chia seeds. Combine and add chocolate chips. Spray cookie sheet (there is not a lot of fat in these so they will stick). Drop batter by spoonful onto cookie sheet. Bake for 10 minutes or until done.
I didn’t have chocolate chips, so I had to chop up a dark chocolate bar. So, my chips are pretty big and random sized. Still taste good though!

These look amazing! I made cookies last night, I was homesick so made my moms specialty, Monster cookies! Although they aren’t healthy in any way shape or form, they definitely were worth every bite (and then I ran a little extra this morning to help make up for it)

I had oreo’s last Sunday, (note plural). Sadly they were not candy corn oreo’s, but they were double stuffed so that made up for it.

Can’t wait to try out this super simple recipe, looks delish! Also, tomorrow is my first 5k since having knee surgery in January, I have to thank you for always keeping me inspired to get back to running! There were some dark days where I thought I’d never get back to my old mileage, and it’s still a struggle, but I know I’ll get there if I keep at it 🙂 ALSO – yesterday I found myself continuously repeating “Nips, hips, and chips” to myself during the whole 40+ minutes of my run. So thanks for that too! 😉

Um, I try on clothes in public all the time. I thought that’s why they have mirrors on every pillar in the clothing department of Wal-Mart 🙂 It’s so much quicker than going into a dressing room!

I always have some kind of a cookie made and stashed in the freezer so we can take them out one at a time. Right now, we have butterscotch chip and pumpkin cookies. But these are next!

My hubby just had one of those pumpkin shaped cookies frosted with orange frosting….that are every where right now….I refrained! I know, shocker!!

Oh my lord, these look good. I love high-carb, high-protein recipes for post-run! I don’t do so hot with protein before long runs, but I definitely appreciate it afterwards. And cookies are awesome. I am proud (or embarrassed?) to say I have cookies all the time. Just had some with lunch.
