Protein Pancakes with Chickpea Flour

Hello! I’m a mess because I thought it was Thursday yesterday and this morning I thought it was Tuesday?! I think the lack of sleep is catching up with my brain.

After I taught boot camp I went for a 4 mile run with some speed work. 1 m w/u, 2 800s, 1 fast, 2 800s. Didn’t keep track of splits, just wanted to speed it up.IMG_4872 (800x600)

It is FREEZING here this morning! I had to bust out my “muppets” gloves. Just call me Grover.IMG_4882 (800x600)

I came home super HUNGRY and quickly threw together pancakes. I wanted to try making a high protein, wheat free version so I made – Chickpea Flour Pancakes! Or Chickcakes for short.IMG_4900 (800x533)

Unfortunately, the first batch was a disaster. I think you really have to grease the pan well for these. IMG_4887 (800x533)

I used butter on the second pancake and it was a success!IMG_4891 (800x533)

garbanzo bean flour

Chickpea Flour Pancakes:

  • 1/2c egg whites
  • 1/4c garbanzo bean flour
  • 1 Tb. cottage cheese
  • dash: salt, sugar, baking soda, baking powder and cinnamon

Mix. Grease pan with butter. It’s okay, 1 pat only has 36 calories and you end up using half of that. Cook. Eat.

*Tip: We keep a stick of butter in the freezer and just run it over a hot pan to grease. image(image source)

    Hi , interesting recipes ..i dont do dairy , trying to go 80% raw so what can i subsidise for cottage cheese please ?? thank u

    Whenever I see chickpea flour, I will always laugh. About 8 years ago when I was in high school that is the only flour I had left and I made cookies with them for my advisor and they turned green!

    I’ve never tried chickpea flour but love chickpeas and hummus so if that means anything, I’m sure I’d love them in a floured version! Wonder if it would be good as a baked pancake?!

    I love pancakes but I hardly ever make them because I seem to always burn them. So I save them for eating when I go out and make waffles at home. Your pancakes always look fantastic.

    I’ve been craving pancakes for a few days but oddly enough I prefer to eat them for dinner than for breakfast! Maybe tonight’s the night lol!

    Bob’s Red Mill is the best! I get their stuff at Ocean State Job Lot and it’s cheaper than anywhere else I’ve seen it. Thanks for the recipe!

      I don’t remember because I bought it so long ago! I only use about 1/4c at a time so it lasts 🙂

      No, they don’t taste as good 🙁 But I eat pancakes so often I can’t have the real thing every day so this is a happy medium 🙂

    I picked up Roasted Garlic Hummus at TJs and I was thinking it would have a hint of Garlic…OMG…it is SOOO garlicy. No one will come near me in the office today! It is delish though.
