I’m not a super big football fan, but I’m down for any party involving snacks and TV! I’m going to a football party and wanted to bring some delicious guacamole. Buuuuut, my avocados aren’t ripe yet so I had to think fast and improvise. (I was just asked to bring fruit but I’m feeling like an overachiever today.)

I love buffalos and I love dip so I thought a Buffalo Chicken Dip Recipe would be perfect.

I made a healthy version and called it skinny so it would go with my margarita of choice Winking smile

This dip is bulked up with some beans for extra fiber, protein and texture. I used pinto, but kidney or black beans would work too.

Skinny Buffalo Chicken Dip Recipe

{high protein, high fiber, gluten free}

Ingredients:

  • 2.5 cups of shredded chicken breast
  • 1/2 cup buffalo wing sauce
  • 1/2 cup plain greek yogurt
  • 1 can beans, rinsed & drained
  • 1/2 cup shredded sharp cheddar cheese
  • optional: 1/4 cup diced green onion

Directions: Mix chicken, sauce, yogurt and beans.  Place in 8×8 glass baking dish sprayed with non-stick. Top with cheese and bake at 350 degrees until heated through. Add green onions to top and serve with chips or bread.

I made this dip for my dad and he loved it too! Just don’t tell the guys it’s ‘skinny’ because you could never tell it’s a light version of a delicious dip.

    I wish I had seen this post sooner! My husband and I were BOTH craving buffalo chicken dip (note that I am the pregnant one here), but weren’t going to any parties. I did a really simple and fast one with canned chicken (unfortunately…but it wasn’t horrible), light cream cheese and low fat sour cream plus buffalo wing sauce. It worked for us and satisfied the craving! If I had TIME to make it, real chicken and those pinto beans would definitely be in it!

    This looks delicious – I LOVE using greek yogurt in recipes, and this is such a great way to lighten things up without losing creaminess! Thanks for the great idea. We munched on these short rib nachos during the bowl today (http://cestsibonmd.blogspot.com/2014_02_01_archive.html)…considerably less healthy, but the superbowl is only once a year right?

    Made “skinny” jalapeño popper dip! Greek yogurt, Neufchâtel, fresh jalapeños, sharp cheddar and some panko breadcrumbs for texture. Hopefully it turns out delicious!

    Im going to make a vegan version of this recipe, because it sounds delicious. I only had buffalo (cauliflower) ‘wings’ for the first time a year ago and fell in love!

    I am snacking on NOTHING but fruits and veggies today! I’ve been on a pancake and bagel and cheese and cracker and red wine binge for a week straight. Well this sounded good. Let’s see if I can follow through? =)

    We’re going to my boyfriend’s old boss’ super bowl party today – I’m always hoping for snacks with avocado! They’re supplying the food so I have no idea what there will be.
