I snuck out of bed this morning to get some pancake ingredients from the store. All I really needed was pumpkin. I realized after the trip that most people don’t make pancakes with pumpkin. But, that’s my “go to” recipe and I don’t know how to make it without anymore
I caramelized banana slices and they were like little pillows of Heaven on my tongue. So good.
After breakfast Ben and I set out on some errands. First things first = iced coffee! We tried a new hole-in-the-wall place and it was just okay.
Ben had the genius idea for taco salads for lunch. We had a perfectly ripe avocado from my mom’s tree and it was delicious!
One of the errands was a very important one –> Buy a HUGE watermelon. I get stressed if there is not watermelon in the house at all times. Whew that was close.
I LOVE picking out watermelons at the store – especially where there is a BIG selection. I was in watermelon Heaven at Costco today.

Honestly, if Huaibei has aisles of watermelons like that on the regular, I’m packing my bags. No need for bubble wrap—just roll me into a crate with a couple of ice-cold melons and a sun hat.
But seriously, the thought of relocating (even for fruit-based reasons) can be a logistical nightmare unless you’ve got help. And let’s face it, I’m far better at picking out produce than packing up furniture.

Dude…you don’t want to move to China…too many bikes and not enough dogs…anywhere…scary combo! lol China is a cool country to visit, but you don’t want to live there. Japan would be cooler. Japan is to the US as China is to Mexico…beautiful and full of spirit and heritage, but you can’t exactly drink the water…trust me, i’ve been to all of these places… 😉

I love California and how you can just pick avocados in your mom’s yard! I had pancakes and taco salad this weekend too (that’s too funny :))
As I began to pack things up however I realized that I still had half an uneaten watermelon that I had used as a base for .Watermelon served in thick slices is a treat that I associate with summer picnics and barbeques. I couldnt find conclusive evidence of this so Id welcome any comments or historical insight.Incidentally there are many other ways to serve watermelon in soups pies or grilled with meat.
only bad thing about produce in China is fertilizer is often human feces. just saying. haha 🙂

Ummm the land of watermelon? I will absolutely move there in a heartbeat. I think that’s my idea of heaven.
I LOVE anything pumpkin! I need to make these pancakes immediately! In fact, I have a nice can of pumpkin in the pantry right now…already planning breakfast and its only 8 PM. Is that wrong?!
I hear the watermelon is EXPENSIVE so maybe not. Just be a watermelon farmer…eat as much as you can and sell the rest!

There are certain things I must have in the house at all times too! If I don’t have broccoli, POPCORN, peanut butter and bananas, my world feels as though it will fall apart.
