I have a super easy Taco Bake recipe below. It’s only 6 ingredients, gluten free and pretty quick. But before we talk about that let’s check in with the dogs.
Hi! How are you doing? I am actually feeling pretty good considering I ran 26.2 miles yesterday. I didn’t even think about it until my mom called me up in the afternoon and said, “How do you feel?”
I paused for a second. Why? Did she think I was getting sick yesterday?
Oh yeah, I ran a full marathon…. “I feel fine! Nothing sore.” Boom.
That makes me happy because I did prioritize recovery after the race. Good job Monican! At least I did that right.
In addition to a dip in the pool I spent some good time with my mom. And I was able to spoil the dogs! My dad bought these EPIC dog bones and I took it upon myself to bribe them to make me the favorite. These are super crazy huge dog bones!!!
I gave them the bones and they were so excited… except that were so big it was hard for them to eat.
It was hard for me to hold them too! They were heavy and greasy and it was hard to get the dogs to sit and shake in exchange for the bones.
And Roxy really likes to take her treats in a specific place in the yard, eat a bit and then hide it.
But she couldn’t pick it up and move it. It was funny, but I did try to help her. Unfortunately she didn’t want my help because she thought I was going to go steal it.
And now it’s taco time…
Today isn’t just your average Taco Tuesday. Today I have a healthy and super easy taco bake recipe to share. So that makes it Turkey Taco Tuesday.
I’m working with Foster Farms this week so my taco bake was made with their Organic Ground Turkey. It’s super lean so this is a healthy swap for ground beef. The turkeys are raised free-range on organic land in Central California and fed an organic vegetarian diet.
Easy Taco Bake
This recipe only requires 6 ingredients, but you can tweak it with your favorite toppings and seasonings.
Ingredients:
- 1 pound lean Foster Farms Organic Ground Turkey
- 1/2 cup diced onion
- taco seasoning OR your own mix seasonings
- salsa
- Mexican blend shredded cheese
- tortilla chips
Optional toppings: guacamole, sour cream, hot sauce…
This is a healthier version of usual tacos because of a few swaps…

- 1 pound lean ground turkey – > swap out fattier beef
- 1/2 cup diced onion — > adds a veggie and tons of flavor
- taco seasoning OR your own mix seasonings –> making your own taco seasoning cuts back on salt
- salsa –> adds veggies, non-fat and tons of flavor
- light Mexican blend shredded cheese –> swap for a higher calorie cheese blend
- tortilla chips –> using them in the recipe keeps ya from eating a whole bag watching TV
- optional toppings: guacamole, sour cream, hot sauce
Directions: Heat 2 Tb. olive oil in skillet. Cook onions until translucent. Add ground turkey and season with salt and pepper. Season with taco seasoning or chili powder/paprika/cumin/garlic powder to taste.
Spray casserole dish with non-stick spray. Layer chips –> turkey –> salsa –> cheese. Repeat. (Mine only had 2 layers.)
Bake in 350 degree oven until cheese is melted.
Serve with sour cream and guacamole (and a margarita because it’s the appropriate food and drink pairing).
I ended up digging into them with my hands. This works because you eat tacos with your hands, right? The messier the better.

Today I worked out, -min the gym because I wasn’t feeling very well. Ended up going to the ER later in the afternoon for shortness of breath and chest pain. Think it was due to low BP/dehydration and low red blood count. Have to go to regular doctor tomorrow for follow up. This is definitely a setback in my health, but I will Keep up my battle against lupus and staying in remission!
