Hello! I made the most amazing snack today, but I am not sure if some of you will think it’s gross. I hope you at least don’t think looking at it is is gross because I’m going to make it everyday for the rest of my life and that means you’ll have to gaze upon this awesomeness fairly often on RER…

Last night I made a MASSIVE sweet potato with dinner. I saved a little bit of it for later. (The fact that I left some is just because I got invited to share in margaritas and french fries and ditched out.)

Anyway. Today when I getting hungry around 3pm I warmed up the sweet potato with a little butta and salt.

Then, I added a scoop of PB. And since I added PB I figured I might as well add jelly. It.was.awesome.

I guess I’m on the Peanut Butter diet today! That is a real thing! Seriously. Except I think I might technically be on the Peanut Butter & Jelly Diet, I’m going to have to write that book…

Then, I took a little walk with my head movies. Needed that Smile

Recently I tried two new-to-me ready to heat and eat dishes from Costco. One is a winner the other not so much…

Skip this one… the sauce was just sweet and not super tasty. The noodles stuck together too much.

The other dish was this Margherita Lasagna. It was super easy to heat – you could even microwave it instead of using the oven if you want.

Din-ah! This was good, not life changing but it works and I didn’t have to cook and have leftovers. Boom.

Update on the Meb for Mortals and Running Strong Book Reviews. I am actually really loving both of these books! So, I’m reading them both at the same time and super getting into them like a real run nerd and everything!

I’ll try to get these reviews asap, but let me know if you have specific questions or want to come over and do a book club about ‘em!

    PB&J Sweet Potato looks AH-MAZ-ING….My favorite is PB&J Cottage Cheese or PB&J on Egg Whites!

    All this food looks so delicious- I loveeee me a good lasagna. Though I can’t say I’m fully on board with sweet potato+ PB&J 😛

    I think that’s a great idea! I think pretty much anything sweet goes with sweet potato, why not jelly then. I’ve done sweet potato+almond butter+maple syrup or honey. So good!

    When I make kong treats for my dogs, I usually mix pb and pumpkin together, and I sometimes lick the spoon after (what? it only touched the kongs, and they’re clean!). It’s delicious, and I don’t see how it would be that different from pb & sweet potato. Hence, I approve of the pb & sweet potato snack. I don’t know about the peanut butter diet, though. I think I was on that during my last few years of anorexia, wherein pb was the only thing of substance I ever really ate. It didn’t feel super.

    I’ve never had peanut butter on a sweet potato, but I am SO glad I bought sweet potatoes this morning because now I’m dreaming of eating a sweet potato with slightly melted peanut butter on top. mmm thank you so much for sharing this brilliant idea (although I may be hating you later when I become addicted…) PS peanut butter diet definitely sounds like a good idea 🙂

    I have a giant bag of sweet potatoes from Costco that I need to eat, so I think one way to make it more exciting is definitely to put PB & J on them. Thanks for the idea!

    I would have never thought to put PB on a sweet potato, but considering that I LOVE peanut butter and I LOVE sweet potatoes, I might just have to give it a try! I mean, people eat peanut butter on hamburgers now, so why the heck not??

    On a side note, did you notice at Amazon link, under “Customers who bought this item also bought…”, the author also wrote “The Ice Cream Diet”??? Although, I’m pretty sure that I’ve done my own version of the PB Diet and the Ice Cream Diet at the same time… it didn’t exactly have the desired results 😉

    I am 110% obsessed with sweet potato and peanut butter, but I have never added jam as well! I will definitely have to get on that ASAP. Since PB&J makes everything better. Obviously.

    I’m on the fence about the peanut butter on sweet potatoes snack. I’ll have to give it a try though. Don’t knock it ’till you try it, right?

    My toddler is basically on the peanut butter diet. He has a lot of energy and he’s at a healthy weight, so I guess it’s working? 😉

    It sounds very gross as does the peanut butter diet but if you exchange the peanut butter for biscoff, then I’m on board, for sure!

    Sweet potato PB&J (SPPB&J?) is SO not gross. Sweet-oes are basically my bread now. And yes, you can use the term “sweet-oes” because it’s too cool not to share. I have a current obsession with roasted broccoli and peanut butter. Try it so I’m not alone.

    I love pb and j on a waffle. I probably would like it on a sweet potato too.
    Today I put apricot preserves in my oatmeal. Never did that before. It wasn’t bad.
    I love dr metzl. Didn’t even know he had a book out. It probably says to foam roll a lot. Lol.
