Since I ate breakfast late “lunch” was an apple…

and one of those protein bars everyone was asking about. Okay, not everyone but enough people that it’s worth it to show the box.

I also brought along some baby carrots for snackage during my shopping excursion. Unfortunately, the carrots tasted a little off. Plus, my shopping trip was a fail. Ben sent me on a specific mission for his bro’s Christmas gift and I couldn’t find it.

Here’s where there unpleasantries get unpleasant for you. I broke a filling or part of my tooth or something in Las Vegas the other weekend. I guess that means it was a good trip? Winking smile

Anyways, now every time I eat food gets stuck in there and I have to floss immediately. Even if that’s in the car.

I know you’re so amazed that I took the time to actually set my camera’s timer and take a picture of myself flossing while driving that the fact that the picture above is disgusting doesn’t matter as much. Am I right?IMG_5154

Then, I got lost. Even though I am a California girl, I am new to Orange County. I only lived with Ben for one month before we moved to Maryland for a year. Insanity.

So yeah, I got lost again. But I did find a new walking / running path and pulled over to check it out. I took a 20 minute walk to explore the path and get my thoughts in order. Love.

After a quick trip to Target to make a return I raced home for dinner. I was HUNGRY which is unpleasant, but not the end of the world.

I made a big ol’ veggie and egg scramble topped with ff cheddar that was on sale at above mentioned Target.

But I was still hungry so I went to get a piece of bread with PB and some how managed to drop the PB covered knife, and it hit my leg on the way to the floor! Boo.  I may or may not still be wearing those pants.  Just call me “Peanut Butter Pants”.

I made Ben a spinach “quiche” for dinner too! I used Caitlin’s recipe and just tasted it = delicious. IMG_5169

I hope Ben likes it because it is going to be my new go-to dish. It was super easy, just thawed frozen spinach in the microwave, squished out the water and then mixed it with 5 whisked eggs and 2 cups of shredded cheddar. My changes: I used a pie crust – yes, like a sweet, dessert crust and it totally worked! I used cheddar not a Mexican blend. I didn’t use onions or pecans because I didn’t have them.

I baked for about 30 minutes at 350 and it was firm and started to pull away from the foil.IMG_5171

Okay, I better go change out of these pants before I get PB everywhere…

    Mmm that quiche looks delicious! I love cooked spinach. Spanikopita are my favourite thing in the whole world right now and quiches come in close.

    For some reason I love getting lost when I’m not in a rush to be anywhere. It’s almost like an adventure!

    I make this quiche all the time…and I love it. I add mushrooms and onions and sometimes and maybe some cottage cheese..it is so yummy and the hubs usually eats the whole thing in one sitting…

    are those protein bars any good? i just tried the coconut bars by atkins and they’re tasty, aspartame and all, but have a meager 4g of protein so i’m looking for something more proteinaceous now…

    I would leave the pants. Can you imagine how intoxicating it would be to smell like peanut butter all day? LoL, they should really consider making this the next perfume.

    I went to the store today to buy some vita-tops for the first time after seeing it on your blog a lot. However, I saw that the price was $7.00!! So I put it back, they look good though, but it’s not worth it; I’ll just get something at Trader Joe’s 🙂

      $7.00! That sucks. They are usually around $4.25 a box around here, which is still very pricey.

        Yeah, I don’t know because I live in San Diego so we are kinda close. It might’ve been because I was at a regular store or something and they up the prices on healthier items than a store that specializes in healthy products in general. I’m not sure. One day I’ll try it!

    You have to get floss picks. You can drive with one hand and floss with the other.

    I’m a total floss-aholic. I doubt that’s a real thing, but I don’t find it disgusting whatsoever!

    haha, I have totally dropped the PB knife on my pants before….maybe more than once! I also hate when carrots taste “off”. It can ruin a great snack!

    1. Yes that picture is impressive > gross.
    2. Dessert crust with an egg pie sounds amazing.

    *I’m crazy, so I just want to clarify that I don’t think the original is unhealthy, or that you should be looking for lighter dishes, but just that you said you might make it a “go to” so I wanted to offer another alternative. Phew!

      If I was making this for myself I would lighten it up with Eggbeaters and light cheese, but since it’s 75% for Ben I made it with the “real stuff’. I’m lucky he’s eating a meat-free meal and can’t press my luck with using low fat options at the risk that they taste different.

      But, you know I’m pretty chill and totally wouldn’t take offense to that anyways.
