What Runners Eat

15 Feb

Hello! This weekend was packed with fun and family and FOOD. I don’t even remember it all, but I’ll try to do a recap of the best parts.

everything i ate this weekend (450x800)

First, I sported my favorite new maxi-dress and my favorite new lipstick for a lil dinner out action.

Saturday morning was all about running. I got in an easy 12 miler. I’m kinda considering this a step-back week in long run land since I did the Surf City Marathon and then Palm Springs Half Marathon the previous 2 weekends.

Saturday morning breakfast Winking smile

And I had a great plan for the amazing bread I bought!

I cut out a big hole in the middle. Ate it.

Then, filled it up with a Spinach Jalapeno dip I got from Costco. It was AMAZING. All of it – the bread and the dip.

And since it was my mom’s birthday we let her decide the menu for dinner. She picked salmon, sweet potatoes and salad. That is my 2nd favorite dinner in the world too! (Pizza is #1)

Unfortunately, I don’t have any pictures of the amazing finished product because I was cooking and serving and all that jazz so she could enjoy the evening.

I also made the cake – it was from a Caramel Apple mix that I fancied up by laying two cakes and putting a caramel apple filling in the middle.

Happy happy happy happy birthday MOM!

I also spent some quality time with my favorite tiny person!

And I know SoCal is super awesome weather-wise but it is unseasonably warm here right now (at least for us) and we were able to eat outside. Love it.

running blog valentines day 9 (600x800)

This morning Ben and I took a walk to get iced coffee. We were making this a tradition a while back and it was nice to get back to it.

The place we go to has some strong iced coffee!

And now I’m trying to get ahead of some work that’s coming this week since I’m traveling tomorrow. I think that calls for a treat!

Question: What was the BEST thing you ate this weekend?

Me: All of the above.

Chicago deep dish. So much cheese.

I am headed out to CA on Wed to visit with some family and I can’t wait. I’m getting tired of this bundling and cold weather here in Chicago!

I cooked seabass in a piquant tomato sauce and served it with mustard crusted roast potatoes on Saturday. It was delicious! Salmon, sweet potatoes and salad would be high on my list too.

Your dresses are so pretty! I’m so happy you’ve been able to spend some time with Ben lately and been able to get back into your routine.

On another note, I love your nail polish color! What is it?!?

That looks delicious, every meal. Happy Birthday to your Mom!!
The best thing I ate this weekend… Tough, as we really feasted for Valentine’s. Ferrer rocher candy brownies? Crab meat alfredo fettuccini? Rib eyes? Or tonight’s meal… Angel hair pasta with sautéed veggies and garlic, so much garlic & olive oil.
    Love your maxi dress.
I have a health question for you, will try to email.
    Safe,happy travels!!

I shared the “Kitchen Sink” ice cream concoction at Disney World with my hubs and our two daughters on Saturday. It was freakin’ awesome! 🙂

That cake looks awesome. My favorite thing I ate was huevos rancheros! Either that or the bucket of queso I consumed on Saturday… YUM. 🙂

the scratch made cannelloni we made for Valentines Day – it’s been our thing for the last 5 years. It’s an almost all day process and he does most of the dishes. Win-win. ;o)

Seriously coveting that jalapeno dip in the bread bowl. Want.

I can’t choose. All of it. Yesterday we grilled bacon wrapped filet mignon and lobster on the grill, and I had a huge anti pasti platter set out to munch on while we were grilling. Today, I made key lime pie ice cream (from scratch). Good thing I run! 🙂

Actually, let me change that answer. I had chicken tacos at Flounder’s in Englewood and they were surprisingly awesome, especially because there were dolphins swimming beside me as we ate. It was epic.

My husband makes an AMAZING a homemade mushroom cream sauce and I made mashed potatoes to go along with dinner last night and chowed down on that cream sauce! I’m on a slow cut right now and this weekend was a total cheat for me. Soooo worth it!
