I had a bit of a pancake disaster this morning. I made my usual “throw random ingredients in the blender” pumpkin pancake recipe and the first one came out great!
But, the batter seemed a little thick so I added some more almond milk. That made them too runny and impossible to flip. So, I had to cook it like scrambled eggs. They look tragic, but tasted good 🙂
I am using our crockpot to make Ben’s favorite dinner – meat! Okay, more specifically – pot roast. I actually like making this for three reasons:
1. It is super super easy
2. He loves it and loves me more for making it 🙂
3. He has leftovers for a few days and I don’t have to cook him dinner
Ingredients: pot roast, potatoes, carrots, bouillon cubes, spices.
Directions: Cut the potatoes. Dissolve bouillon cubes in water. Place roast in crock pot and season it with S&P and spices on both sides. Put carrots and potatoes on top of roast – season them too if you want. Pour bouillon broth on top of all of it. Set crockpot on low for about 6 hours (this depends how big your roast is and how big you cut the potatoes). Marathon Training: I did 6.2 miles today and felt really good! It is so weird how some days it is so hard to get your body moving and other days I feel like I’m just flying along! The weather is gorgeous today, but there might be snow on Saturday. I hope it waits until after my last long run to start!!!

I have been reading your blog for a while and don’t think I have commented yet, but I am very similar to you…and by that i mean giving myself WAY TOO HARD OF A TIME when I have no reason to. You are so strong and so fit and a few take-out meals and cereal ODs are part of being human. My husband says I only know how to “crockpot” food or microwave it. Use the crockpot bags next time and you don’t have any clean-up. They are my favorites.

Scrambled pancakes are going to be all the rage. I can’t handle flipping them, but I’m sure I could scramble them. But I pretty much never make pancakes because I’m too scared.

I always end up with a pancake that looks like scrambled eggs! It’s the last of the batter that I can’t bear to get rid of. It’s tasty isn’t it?
