Hello! How was your weekend? I had a little bit of a cake making disaster so I had to bake TWO. Ha! I’m the worst. I need to take baking lessons. I have the cake eating down pretty well tho.

First. Last night I had a midnight snack after picking up my peep from the airport. I have a visitor this week. More on that later.

It’s my SIL’s birthday and she requested a red velvet cake. I made one and made a cupcake on the side to ‘check’ it. Turns out it was a little dry because I used greek yogurt instead of oil (I only had olive oil).

Since it was her special birthday time I didn’t think this was acceptable so I went to the store to get new supplies. I opted to use this Betty Crocker Red Velvet cake recipe that basically fancies up a box cake mix.

Luckily it came out great!

In perfect timing news – I got a Stitchfix delivery yesterday!

I opened it up to find a perfect dress to wear today. Good job Stitchfix!!

If you want a fix this dress is the same and it’s soooooo comfy!!

I wore it to Heathie’s dinner at Elephant Bar. Apps. Drinks. Food.

    I’ve gotta get a birthday cake for my husband on Friday…and realized that even though he is particular (gotta get him a peanut butter chocolate one) I really do not care. My favorite flavor of cake is “cake with frosting.”

    I love carrot cake and cheesecake. So good! I made two cakes this weekend too. It was my daughter’s birthday, so I made her a little smash cake, and the another birthday cake for everyone else. They were white cake with cream cheese frosting.

    White cake, with (only) homemade chocolate frosting. I’ll eat box cake mix, but I not canned frosting. Cake snob I guess, but if I’m going to spend the calories, they’d better be worth it!

    This weekend all I wanted was a carrot cake cupcake w cream cheese icing. I saw a couple but they looked subpar. I also want to find somewhere that will let me have a mini cupcake.

    Awww I love that you made another cake! Bummer about the first one being a fail, though. At least you know now! Hmmm my favorite is probably vanilla with chocolate frosting or red velvet… close call. Both so good.

    Tres leche!! It was my wedding cake and it was seriously the best thing I’ve ever eaten in my life. Apparently they are a total pain in the ass to make though, because the baker literally rolled her eyes while I placed the order. You’re welcome. Lol.

    Haha, when I was getting into fitness in high school, I made a regular chocolate chip cookie recipe using olive oil and added some protein powder. I was so offended when no one liked them!!

    I am a nutritional nightmare but for some reason, I’m not a fan of cake. Not even ice cream cake (I don’t like ice cream!). I’m eating milk chocolate chips out of the bag right now, and I could drink chocolate milk until I burst, but no cake. Yours looks really cute, though and I bet your SIL felt so special and loved!
