Trail Mix!! I dipped a little too hard into the trail mix stash today. Why is something so calorie dense so easy to eat and eat and eat?!IMG_3622

I have been craving oatmeal all day so, I decided to have breakfast for dinner in the form of oat bran with PB.

In my travels today I picked up Chia seeds. I cannot wait to eat like the Tarahuamara 🙂 I’m trying them tomorrow!IMG_3623

I also found Almond Butter at Costco – I didn’t partake since I am currently obsessed with crunchy PB, but if you are local and love this stuff…

A few of you wanted to know how I made the overnight oats from the other day and the roasted chickpeas today. Here are the recipes:

Roasted Chickpeas:IMG_3619

Directions:

Heat oven to 400 degrees

Drain and rinse canned chickpeas (I use about three cups of a super huge can)

Pour in bowl and add a splash of each to taste: olive oil, soy sauce, maple syrup and chili peppers

Toss to coat and spread onto roasting pan

Roast in oven for 40 minutes or until they are desired consistency (I like mine a little burnt). Shake pan halfway through cooking to make sure they are roasting evenly.

Overnight Oats:

Combine the following in a bowl: 1/2c oatmeal, individual yogurt, 1/4 to 1/3c soy milk, banana and cinnamon.

Let sit overnight. In the morning stir and add soy milk if it’s too thick. Sweeten with your fave sugar. Top with PB, berries or whatever you like 🙂 Enjoy!

Now I’m sipping on tea and trying to warm up, for some reason I cannot get my hands warm today! See ya later 🙂

    Oooo, chia seeds, I’ve been meaning to look for them. Apparently there is a chia seed, lime juice and honey concoction described at the beginning of the book I must go back and find.

    That trail mix looks so good! I like adding frozen berries in my overnight oats at night because by the morning they are defrosted and have blended in with the oats 🙂
