Bikini Tortellini

by runeatrepeat on April 27, 2011

The grass is back! I am on the Amazing Grass magic potion for the next 30 days. I have always enjoyed Amazing Grass – even when I tried it for the first time. And it’s been too long. IMG_9980 (600x800)

This afternoon I headed to the beach to meet up with my running group. I’d like to think of this as my office…IMG_0001 (800x600)

And this is my “break room” Winking smileIMG_0002 (800x600)

But, before the group I made dinner! I think I may stick with eating before I go since I get home at 8pm and would rather eat at 4pm than 8.IMG_9990 (800x533)

I always think of Tortellini as a high calorie dish, so I tried to lighten it up for the upcoming summer season. Bulked up with veggies and seasoned with olive oil, it’s lighter than a sauce laden dish. I call this – Bikini Tortellini! IMG_9991 (800x533)

Bikini Tortellini Recipe

Ingredients:

  • 1 package Barilla Three Cheese Tortellini
  • 1 cup each: asparagus, green beans
  • 1/2 cup each: chopped onion, cucumbers, tomatoes
  • 2 Tbs. olive oil, balsamic vinegar, seasoning of your choice (I used 21 seasoning salute and Italian seasoning)
  • Parmesan CheeseIMG_0004

1. Sautee onions, asparagus and green beans in a frying pan until tender. Season with salt, pepper, garlic power and Italian seasoning to taste.

2. Cook tortellini while veggies are cooking. Drain.

3. Combine veggies and tortellini. Season with olive oil, balsamic vinegar and spices. Let cool slightly – this is supposed to be a summer salad dish.

4. Toss with tomatoes and cucumbers. Top with shredded Parmesan Cheese. Serve.IMG_9992 (800x533)I made this dish as part of Foodbuzz’s Barilla contest, but did not receive any of these ingredients for free.

Enjoy!IMG_0003

When I got home from the running group I covered my face in ice cream and called it a facial. Yeah, a facial of happiness. IMG_0004 (800x600)

See ya later Smile

Okay, so I’m intrigued by the Amazing Grass. I tried it once, almost puked and never tried it again- do you use the original green or one of the flavors? And what benefits did you see? I may have to give this stuff another shot.

Yum… an ice cream facial :)
Your tortellini looks like a nice and light meal. You show that tortellini doesn’t have to be unhealthy.

Ooh! That looks tasty! Italy could use a lesson from you on lightening up their pastas! I feel like adding more vegetables is always a plus!

I love making “sauceless” pasta recipes in the summer. It makes them feel so much more light and refreshing.

That looks so yummy, I will have to try it but with veggies that the bf enjoys…which are none of the ones you pictured. I’m also intrigued by the amazing grass… I’ve heard people who love it and those who hate it. Glad you love it!

First off…super jealous of your “office” and “breakroom”, what an amazing atmosphere! I have got to get out NC for a weekend or forever and move to the West Coast lol
Second—Bikini Tortellini looks super yummy! I will definitely be borrowing that recipe!
