Bikini Tortellini

The grass is back! I am on the Amazing Grass magic potion for the next 30 days. I have always enjoyed Amazing Grass – even when I tried it for the first time. And it’s been too long. IMG 9980 600x800 thumb Bikini Tortellini

But, before the group I made dinner! I think I may stick with eating before I go since I get home at 8pm and would rather eat at 4pm than 8.IMG 9990 800x533 thumb Bikini Tortellini

I always think of Tortellini as a high calorie dish, so I tried to lighten it up for the upcoming summer season. Bulked up with veggies and seasoned with olive oil, it’s lighter than a sauce laden dish. I call this – Bikini Tortellini! IMG 9991 800x533 thumb Bikini Tortellini

Bikini Tortellini Recipe


  • 1 package Barilla Three Cheese Tortellini
  • 1 cup each: asparagus, green beans
  • 1/2 cup each: chopped onion, cucumbers, tomatoes
  • 2 Tbs. olive oil, balsamic vinegar, seasoning of your choice (I used 21 seasoning salute and Italian seasoning)
  • Parmesan CheeseIMG 0004 thumb Bikini Tortellini

1. Sautee onions, asparagus and green beans in a frying pan until tender. Season with salt, pepper, garlic power and Italian seasoning to taste.

2. Cook tortellini while veggies are cooking. Drain.

3. Combine veggies and tortellini. Season with olive oil, balsamic vinegar and spices. Let cool slightly – this is supposed to be a summer salad dish.

4. Toss with tomatoes and cucumbers. Top with shredded Parmesan Cheese. Serve.IMG 9992 800x533 thumb Bikini TortelliniI made this dish as part of Foodbuzz’s Barilla contest, but did not receive any of these ingredients for free.

    Okay, so I’m intrigued by the Amazing Grass. I tried it once, almost puked and never tried it again- do you use the original green or one of the flavors? And what benefits did you see? I may have to give this stuff another shot.

    Ooh! That looks tasty! Italy could use a lesson from you on lightening up their pastas! I feel like adding more vegetables is always a plus!

    That looks so yummy, I will have to try it but with veggies that the bf enjoys…which are none of the ones you pictured. I’m also intrigued by the amazing grass… I’ve heard people who love it and those who hate it. Glad you love it!

    First off…super jealous of your “office” and “breakroom”, what an amazing atmosphere! I have got to get out NC for a weekend or forever and move to the West Coast lol

    What a great healthy and EASY recipe!! Good way to carb up before or after a run, too. Looks delicious! Can’t wait to try it this weekend!
