Killer Cake in a Mug Recipe

I can’t even call this an Everything-But-The-Kitchen-Sink Salad because I’m pretty sure that ended up in here somewhere under the lettuce too!

I picked up some brown rice sushi from Trader Joes because I was shopping hungry and decided that would make a good salad topping. Well, that or I was too lazy to dirty another plate? You decide.

Recently I was thinking about how I always ATTACK the bread bowl at restaurants and parties. I think part of it is because I don’t have good bread at home.

This is seeded flax ciabatta. It’s amazing. Life is too short to eat bad bread. seeded ciabatta

I also topped my salad with some of Ben’s random egg and turkey stir-fry. Oh, and he put a ton of cashews in it. He is not exactly winning Top Chef next season, but it was good.

Despite my bucket of sushi filled salad, I was hungry an hour later. I wanted a killer snack.

Killer Cake

I made up a Killer Protein Cake recipe because I was too lazy to look up my past one.

In a sprayed coffee mug:

1/3 c egg whites

2 Tb. whole wheat pastry flour

packet Stevia (or sweetener of your choice)

dash salt, cinnamon, baking soda, baking powder

Stir and microwave for 1 1/2 minutes or until firm. Gently slide out of mug.

I flipped it on a plate and spread it with a PB and chocolate chip “frosting”.

      Would this work with quinoa flour? (quinoa flour can be pretty dense…).
      Also, would it be okay dumped in a cup of yogurt?

      I know I eat way too many dairy and eggs…so that might just be more excess all combined…oh, my lack of self-control !

      I 100% agree that good bread is a must! I am such a carb girl (specifically bread) I can never turn it down!

      That cake looks easy and delicious! I will have to give it a try

      I keep trying to make a easy muffin/cake recipe like that, but gluten-free flours have yet to yield the texture result I want.

      And I agree that life is too short for bad bread. Which is probably why I haven’t eaten bread in….months. Too many gluten-free breads stink! And the ones that are decent are that good.

      That salad us fantastic! Next time I buy sushi from the store I’m going to make a salad out of it, too. 🙂

      I never used to “waste calories” on good bread until I realized that having one or two pieces of delicious bread satiated me 10 times more than fake low cal bread.

      That bread looks AMAZING. I have serious bread issues too. Like, an entire loaf of Italian bread in 2 days (I could do it in 1 but pace myself) sort of problem!

        It’s okay for store sushi. I’ve never had a bad experience with it and like it. But, I’m definitely not picky about fancy sushi either 🙂

      I’m really not good with all the different flours out there- do you think regular flour, or cake flour, would work? Obviously not as good for you, but I have a ton of both.

        I think both should work fine. The main idea is that it should be a lighter flour NOT straight up whole wheat 🙂
