Coconut Rice with Pineapple and Cranberries Recipe and a GIVEAWAY

I have a great summer time side for you! Ever since Memorial Day when my mom asked me for side dish ideas for our BBQ I have kept my eye out for inspiration. My Black Bean Confetti Salad was born from that and now I have have another one – Coconut Rice with Pineapple and Cranberries

I am a sweet tooth girl all the way and this dish is a great sweet option to pair with something savory like Chicken & Apple Sausage or Chicken Kebobs!

Coconut Pineapple Rice Recipe

Ingredients:

  • 1 cup brown Jasmine rice (from TJ’s)
  • 1.5 cups Silk coconut milk unsweetened
  • dash salt
  • 1/2 cup sweetened coconut shreds
  • 3/4 cup pineapple chunks (in juice if you buy the canned)
  • 1/2 cup cranberries

Directions: Combine rice, coconut milk and salt in a sauce pan and bring to a boil. Lower and simmer until rice is done and liquid is mostly absorbed (about 35 minutes for my rice). Fluff with fork.

Add coconut, pineapple and cranberries. Add a few Tb. of coconut milk if it gets too dry

Truthfully, I am obsessed with Silk almond milk so I was a little hesitant to try something new from their line. But, the coconut milk is good!

Silk actually has something like +26 different products in stores, but I always buy my favorite. Well, it’s time for you to try something new too!

    I’d totally get my favorite…Dark Chocolate Almond Milk. (Hello, luvah.) Except I love coconut and your recipe sounds right up my alley, so now I’m conflicted and confused and feel the need to purchase both. OOOH! I could mix them and I’d bet it would taste like an Almond Joy.

    I’m such a creature of habit bc I’m so picky so it’s hard for me to try something new so I usually always stick with my old friend of Silk Vanilla Almond milk though I’ve been itching to try the chocolate lol. Maybe I’ll get a chance if I win!!

    I’d like to say that I would try something new, but usually always end up with the fav – almond. I use it in my morning smoothie – even my kids drink it now!

    I would most likely stick with my usual-unsweetened original almond milk. I started buying the Silk brand of almond milk because it doesn’t contain Carrageenan.

    Try something new! Because you can always go back to your old favorite to reassure yourself why it is your favorite if you don’t like the new. And it’s nice to switch things up

    I have yet to try Silk’s Coconut milk, but I love other brands of it, so I’d stick with that. I did their Almond milk for quite a while first, but coconut milk is where its at!

    I love their Almond Milk, but if I was getting something for free I would definitely try the coconut milk. If I don’t like it then I wouldnt feel as bad about giving it away or just not finishing it!

    New but I draw the line at eating insects etc though. LOL!
    We call this rice “nasi lemak” over here and we use fresh coconut milk (santan) and boil/cook the rice in a rice cooker. I also add in thin strips of gingers and some screwpine leaves to enhance the flavour and smell.

    I do both! I love to stick to my favorite (unsweetened almond milk), but I also love trying new things, like their dark chocolate almond milk I tried today. Delicious! NOT embarrassed to say that I always have at least three cartons of Silk in my fridge at all times…;-)

    Yes, I would totally try something new. Oddly enough, I always used almond milk, but alas, one day the grocery store was out, so I tried coconut milk – LOVE! Now I switch back and forth, but I think coconut is my favorite.

    Hm… I’ll level with you. I will almost certainly use this coupon to buy chocolate silk, because it is my absolute favorite. I love the super chocolate flavor without the really heavy weight/tooth-covering of regular chocolate milk. I would buy that chocolate Silk and I would drink ALL OF IT. No shame.

    Old favorite all the way! I love unsweetened almond milk (plain or vanilla). I tried 1/2 coconut 1/2 almond milk from Almond Breeze and was not a fan.

    When I spend my own money, I stick to Light Original Soy Milk! But with a coupon, I’d definitely try something new!

    i love Silk almond milk, I have never tried their coconut, but i would be willing to give it a shot! i must admit their chocolate almond milk is one of my favorites too!!

    I’d try the coconut milk so I could make this recipe! By the way, your cabbage, garbanzo bean, TJ’s peanut dressing, etc. salad has become one of my family’s favorites. I put it on a bed of quinoa for a light dinner. Thanks for both the running and the “eating” inspiration. 🙂

    Say WHAT? Rice cooked in coconut milk? It sounds heavenly and I gotta try it. I currently have 3 cartons of Silk Almond Milk in the fridge (yes, I’m a heavy user), but have yet to try their Coconut Milk. MUST DO!
