Pumpkin Pie Oatmeal

Hello! I made an amazing pumpkin oatmeal this morning and wanted to share the recipe. Pumpkin season officially starts tomorrow, wait I mean Fall – Fall begins. Same thing, right?

First, I hit up the gym this morning super early for a group class. I really want to find some good (read: make me sore) classes to change it up and get in some cross training.

On the way home I stopped at the store for seltzer (addicted) and pumpkin (craving). I made a huge bowl of oatmeal with oats, pumpkin and egg whites. It’s packed with whole grains, healthy fat and protein. Boom.

Pumpkin Oatmeal Recipe

  • 1/2 cup instant oats
  • 3/4  cup water or almond milk to cook oats
  • 1/3 cup egg whites (or 2 egg whites)
  • 1/3 cup canned pumpkin
  • season with: stevia or sugar, pumpkin pie spice, dash salt

Directions: Cook oatmeal to package directions (I cook them in the microwave but stove top works if you’re cool like that). Add egg whites, cook 30 more seconds. Stir. Add pumpkin, cook 30-45 more seconds. Stir. Add in sweetener and spice. Cook an extra 30-60 seconds if you want it thicker. Top with walnuts, almond butter, chocolate chips, goldfish or whatever you want.

      Love all things pumpkin and oatmeal. I’m embarrassed to admit that I never thought of using egg whites. I’ll definitely be giving this a try.

      Apple pie, butternut squash!!! Roasted pumpkin seeds!!! I’m in love. But I have to agree with Sarah…the fresh fruits and vegetables of summer make me happiest.

      If I had to choose a season for food, I’d pick summer. Berries, stone fruits, melons… all the best things. I couldn’t give a shit about squash. The end.
