I’m sharing a layered Watermelon Smoothie Recipe in honor of my 2nd favorite day of the year… National Watermelon Day!!

I have often said that RER is a love letter to running and watermelon –> my two favorite things in the world.

I am not exaggerating my obsession with either. I cannot get enough. So, although I understand the virtues of ‘everything in moderation’ I am unable to put that approach into practice because I am addicted to endorphins and lycopene (and whatever else is in watermelon)!

Today I made a fun recipe with my favorite food in the form of a layered smoothie. I think it’s super healthy because it doesn’t have a ton of added random ingredients or unnecessary sugar. It’s just the basics, just like I like it.

Layered Watermelon Smoothie Recipe

Ingredients:

  • 1 heaping cup chopped watermelon (seedless)
  • 1 scoop vanilla protein powder
  • ice
  • frozen spinach (a handful of raw would work too, but might not come out as thick)

Directions: Mix watermelon, protein powder and ice in blender. Pour out half and set aside. Add spinach to blender with half of remaining watermelon. Mix thoroughly and pour into glasses.

Carefully pour the pink watermelon smoothie layer you set aside on top. Garnish with sunflower seeds for a watermelon-y look. Enjoy.

      I made these baked tostada shells to change it up tonight. Since they’re not fried you can eat 8 of them. Or maybe not, I’m bad with numbers.

      I like the taste of watermelons but I hate the hassle of them with the seeds…

      I love watermelon but to be honest they’re just too big to bring home for me and my hubby– maybe when I have more people to eat it with I’ll splurge…hahha…something tells me you could prob eat the whole thing though!

      Have you tried the Panera watermelon feta salad? It’s got a pretty awesome flavor and seems like your kind of thing 😉

        I am super weird actually in that I prefer watermelon straight up – not in recipes unless I throw some in a smoothie for flavor. I usually eat if before I can make anything else with it.

      For some reason I thought I could tell you that it was NWD before you found out and that would make me so cool. LOL! Like you’d ever need someone to tell you it was Thanksgiving. What was I thinking?!

      I just might buy some today when I go food shopping. I once went to a party where we blended the inside of a watermelon and added vodka. We served it back in the rind as a bowl. Like punch!
