Hello! How’s it going? I have an awesome Blue Apron Giveaway to share today. Plus, they are offering RER blog readers a discount on their first delivery. I kind of feel like this is perfect timing for the holidays. Life is busy and if you’re like me you’re cooking for Thanksgiving and pot lucks. That means week night dinners are an after thought. Well, let Blue Apron do the thinking and shopping. Boom.

I got the delivery a few days ago and made the Garlic Shrimp that night. This was super easy to prep and make. But it looks super fancy!

And of course it was delicious. I’m a big big fan of rice. I should just make a massive batch every week and have it daily.

The next night I busted out my new Scanpan to make the Crunchy Parmesan Chicken.

I am the president of “getting people to eat more veggies by telling them to roast ‘em club”. It’s a real thing.

So I was very happy that both of this week’s recipes included roasting the veggies.  If you don’t roast broccoli and/or brussel sprouts you are living life wrong.

My new pan cooked up the crunchy chicken perfectly. It’s nice and sturdy and well made (my previous frying pan has a loose  handle, which made me nervous).

And I just realized I should be wearing a blue apron in this post!! (Fun fact: Chefs in training around the world wear blue aprons – it’s a symbol of lifelong learning in cooking.)

I loved everything about this meal. I love sweet potatoes and roasted broccoli and the breaded chicken was delicious. Love all of it. The recipe is on their Recipe Page.

    I just got my first Blue Apron shipment on Friday and I L.O.V.E it!!! I can’t wait for my next one!

    I’m really looking forward to the Queso and Pepper Arepas! I’ve never made arepas but I always get the super cheesy one from the Whole Foods Prepared foods section and gobble it down so fast! Can’t wait to make my own!

    OMG roasted cauliflower mac and cheese sounds sooooo good. Actually all of their food sounds good but i am a sucker for subbing cauliflower for other less heathy options and this one sounds perfect!!

    Blue Apron is responsible for our learning how to roast potatoes so that they actually come out crispy. I can’t tell you how much this has improved our dining lives at home! That caramlized leek & barley miso ramen looks deeeelish!

    North African Spiced Shrimp and Couscous! I love that Blue Apron encourages chefs at home to incorporate an ingredient or two that they wouldn’t buy otherwise (or don’t want to buy a ton of!), like Ras El Hanout which is featured in this recipe!! would love to try this one! 🙂

    I happen to be the worst cook/chef in the entire world, this might just save me! I’m really good at ordering take-out, so even though all of their recipes look amazing, the Yu Choy Cellophane Noodles look just like one of my take-out dishes! Would love it if I could make this myself!
