A rep from Blue Apron contacted me a while ago about trying their homemade dinner delivery service. Even though I LOVE food I don’t consider myself a great cook (just great eater) so I was all about someone sending me ingredients and instructions on how to make a legit fancy meal.

My 3 meals were Parmesan Crusted Chicken, Rice Flake Crusted Salmon and Cheesy Broccoli Rotini Casserole.

I made the Salmon first because it’s my FAVORITE. After pizza my ideal dinner is salmon, sweet potatoes and greens. Seriously – I have proof from 2012. And that is exactly what they sent except… it had a delicious Asian twist!!

I even busted out my whisk – I don’t know if I’ve ever used this thing!

This is soy sauce and miso paste – something I’ve never used at home before!

The salmon and sweet potatoes came out amazing. I love that I cooked with new-to-me ingredients so I learned about spice combos I can use again.

Since I had leftovers I was happy to bust this out the next day for lunch too! Bonus.

The second meal was Cheesy Broccoli Rotini Casserole. I am a fan of casseroles, but always use the stand-by Cream of Mushroom soup for the base – this required some flour and milk and came together easily and I felt a lot more chef-y.

Since the casserole made so much I actually took a serving out and gave the rest to my brother and SIL. They LOVED it and text me about it the next day!

The last meal was Parmesan Crusted Chicken with Kale Caesar Salad and Toasted Hazelnuts.

Truthfully, when the ingredients came in the box all together I thought this was for the Rotini – I had never used Celeriac before!

I have breaded chicken in the past, but not using the double breading technique the steps taught me. This made it very crispy!

But even with clear cut steps your Monican shows her true not-fancy colors… I burnt the crap out of the hazelnuts! Ha! It was totally my fault because I was on the phone while cooking and forgot about them.

This dish was amazing! The salad was kale with a delicious Caesar dressing. The steps showed it with chopped chicken, but I thought this presentation looked fancier for the blog.

The step-by-step guide with pictures made it super easy to make all these fancy (to me) dishes.

3 New Things I learned from Blue Apron:

1. Breading using the dry/wet/dry technique gets chicken super crispy!

2. Celeriac is a vegetable.

3. Sweet potatoes and a soy/Asian dressing go amazing together!

    THANK YOU!! I know it’s been several months since this was originally posted, but I was fortunate enough to redeem the 2 free meals when I started an account with them tonight. I’m a runner, but had arthroscopic hip surgery 2 weeks ago and am stuck on crutches for another month. Blue Apron sounds like a perfect solution, as it’s extremely difficult for me to do things like grocery shopping on my own, and I feel badly dragging the bf around to every errand. Now I can surprise him with a freshly cooked meal when he gets home!

    I use Home Bistro. The difference is I don’t have to prepare the meals, they are ready to go. It helps me watch those dreaded calories too. I love the service, choices and it fits into my food budget.

    They sound like great meals! Part of the challenge I find when wanting to try something new is to know what flavour combinations work together. This shows you exactly what combos are good, and then you can replicate them. So simple!

    I’ve finally needed to start cooking since you only get so many years after college being tragic in the kitchen. Fpr the past year or so ive seeked out new recipes and ot can be fun 🙂 Laat night, I made brats, sauerkraut and potatoes because I oh so German.

    Dinner last night was pork loin and apples in the slow cooker with roasted butternut squash and Brussels sprouts.

    I think Blue Apron looks like fun – sort of a self-led cooking class!

    Boo, they don’t deliver to Minnesota! That’s ok, we’ve been cooking up some really good food in my house lately. Last night was Apple Sage Pork Chops with baked sweet potatoes. Great Fall meal!

    Mixed greens, alfalfa sprouts, veggie burger made from quinoa and a lot of guacamole 🙂 oh and a handful of sea salt kettle potato chips. It was filling and tasty and since I only had to use the microwave no one got hurt!
