Happy Sunday!
It’s weird to be home for the first time in weeks and weeks. I keep feeling like I’m supposed to be somewhere running or eating or repeating.
It’s kinda sad actually, I wish I was running a race this weekend! Keeps me busy and happy and crazy. Just like I like it.
Instead of a race I treated myself to a nice lil walk with my head movies and celebrated Pancake Sunday!
I bought this Gluten Free Pancake Mix a while back out of curiosity/because it was on sale and the other kind wasn’t (same as that tragic pizza dough). I am a sucka for a sale.
Anyway.
One bad thing about gluten free food is it often has less fiber than whole grain versions. This is no bueno, you gotta keep it regular people – especially when you’re running races hello! So, when a rep from Benefiber contacted me to use their powder I knew I wanted to use it in a few dishes I make that are lacking in the fiber department.
The other night I made breakfast for dinner with Chilaquiles. I used corn tortillas, eggs and TJ’s spinach dip. Chop tortillas. Cook ‘em up.
Mix eggs & dash of milk (this is where I added a serving of Benefiber). Cook. Add Spinach dip. Done. I thought it was amazing.
This morning I cooked up the pancake mix according to package directions and added a serving of the powder. (You can’t taste it at all.)
I made one of the pancakes a savory version with Smokey Bacon Cheddar that Cabot sent me. Um. I’m not a big bacon person but my family thought it was epic.
Pancake Sunday. You’re doing it right.

I add ground chia and flax seed to my pancake mix. We have an organic whole grain pancake mix here (in Canada) from a brand called President’s Choice. Once in a while I’ll also add ground almond. Yum!

I did the pancake thing this weekend as well! Went with pumpkin silver dollars, with some peanut butter on top. In the gluten-free department- I’m a big fan of Pamela’s Baking and Pancake mix. Not sure where it ranks in the fiber department, but it is tasty!

I’ve been doing smoothie breakfasts for the past month. This mornings had kale and beet greens, green tea, a banana, some frozen mixed fruit, cashews, chia seeds, vanilla, a pinch of salt, and water. Not my best so far but good enough. The beet greens turned the whole thing an interesting color.

I’ve had that mix before it’s not bad. The best mix is wholefoods wholewheat organic pancake mix. It’s delish! This morning before my run I had cookie balls (oats, almond butter, craisins, chia seeds, flax seed…). Post run salsa eggs and turkey bacon. Yummy.
