Easiest Pumpkin Cupcakes

This is actually a super old recipe I got from the Weight Watchers message boards the longest time ago. You guys know I love super easy recipes and this one fits the bill.  Plus, adding a can of pumpkin to a box of plain ol’ cake mix  adds some good fiber and vitamins!

The ingredients: Spice Cake mix, a can of pumpkin, pumpkin pie spice, and water (not pictured).IMG_1798

Directions: Mix the cake mix, can of pumpkin, 1 tsp pumpkin pie spice, dash of salt and 2/3c water together. Mix well, add more water if it is too dry.

Spray the cupcake wrappers with non-stick spray. They will stick the the paper if you don’t do this, since you are not adding oil. Pour batter into cupcake wrappers and bake according to box directions. (Mine was 375 for 18-20 minutes.)

And since you’re not using eggs feel free to eat as much batter as you’d like! No salmonella risks here!! IMG_1811

I frosted them with Cream Cheese frosting that I colored orange (food coloring). IMG_1816Now I am off to don my $6.00 Target Halloween shirt and attend a kid’s Halloween party. You can be jealous, they probably will have lots of alcohol – we are Mexicans who know how to party.

    Just so you know – canned pumpkin also goes great in Trader Joe’s Gingerbread mix. Check out my blog to see the results. 🙂

    What a great idea! I just posted on my blog about making pumpkin space “muffins” from a Libby’s kit, but I it will be hard to find again so this is a great alternative.

    This reminds me of something I saw on the Hungry girl website. They just mixed a can of pumpkin with a box of chocolate cake and that was it, no butter, sugar or oil. I made some pumpkin walnut bars yesterday, so dangerous to have around the house!
