Hello! Welcome to September! Are you ready to rock the last four months of the year? We can make some big improvements and hit some big goals in that time. This morning I hit the road for 10 miles. It was an easy paced run while I listened to podcasts about running.

I spotted the horse this morning too! It’s so random that I knew there were horse trails around but never saw them and now I’ve seen this horse (and her owner) three times now. I always run this path and never saw it before. This morning I stopped to take a picture and told the horse rider she was gorgeous!

After running and eating I ran some errands. One of the stops was to See’s Candy. I LOVE that they always give you a sample. They have the best chocolate.

Remember that crockpot chicken I made for tacos yesterday?

Well, today I used the shredded chicken to make enchiladas. I added some mushrooms to them. And I used so much cheese. That’s the secret to good enchiladas (actually that’s the secret to life) ALL THE CHEESE!

They came out so good! The combination of the seasoned chicken and roasted salsa made these super tasty.

And then I hit the town for a few drinks out. I got ready while sipping a skinny margarita since I had the idea in my head from my taco post.

    one of the best things was cooking new stuff for dinner almost every night. I would get ideas from different sources and I made up the recipe. Most of them came out pretty yummy!
    Oh, and another thing- I had a really good solid running schedule. That’s a first! I was pretty psyched about that. Let’s see how September would look like…with the biggest helper (my parents) leaving for Japan (won’t see them until summer next year again), I hope I can get in some good runs in.

    Mmmmmm! Cheeeese! I could probably eat dirt if it was topped with cheese. It’s my Kryptonite. The most fun thing I did in August was travel around Ireland drinking good beer and eating good food and sometimes seeing amazing things.

    August was full of Tutti Frutti frozen yogurt. So delicious. A lot unhealthier when you pile brownies on top but that’s what makes it feel like heaven.

    One of the best things I can remember was plantain lasagna made by m aunt. It’s basically lasagna but made with plantains instead of pasta.

    We Venezuelans love plantain. And we put it in everything.

    7 roller coasters in one day at Busch Gardens with my boyfriend and his daughters was definitely one of my favorites from August. I also had a Dairy Queen blizzard that trip which didn’t disappoint. 🙂
