Hello! How’s it going? Vegas says ‘what’s up?’.

My legs were super dragging on my run yesterday so I knew it was time for a rest day. Actually, Thursdays are usually my rest day so this worked out great.

I took a short walk and did some strength while watching HLN and the Duggars. It balances out.

Then, I made ‘everything oatmeal’ = oats –> cook. Add 1/4 cup egg whites –> cook more. Stir in sweetener of your choice. Top with peanut powder, almond butter and cinnamon.

This weekend after the Disneyland Half Marathon I wanted to stop for donuts. But, I had to make a stop at the store for some things first and spotted this healthier option – Gluten Free Zucchini Banana Chocolate Chip Muffins in the freezer section!

Many gluten free treats just taste ‘different’ from gluten filled goodies – the texture takes getting used to. But, these are really good and dare I say it – moist.

They are pricey, but the nutrition stats are impressive for the taste. I’d compare them to gluten free VitaMuffins (g-free VitaTops/Muffins don’t exist right now, but they are pretty $$ too). I bought these at Ralph’s – they are in the freezer section. Tip: Microwave them for 1 minute and enjoy.

For fun – I have a race coming up this weekend. Plus I’m on a mission to add some more to my race calendar for the year. This video is wildly accurate.

    I love the veggie muffins–Costco (at least the one by me, in central Ohio) carries them for a (slightly) better price than at the grocery store, I think. The banana chocolate chip ones are great, and so are the caramel corn and chocolate zucchini muffins!

    I had mile repeats today, now I’m hanging out in my compression socks. Speedwork and I are not really friends, but I know that it makes me faster.

    Thought I’d link you to a gf banana muffin recipe I found recently. It’s dead simple (all prepared in a blender!) and very tasty. I use Bob’s Red Mill certified GF oats. Yum yum!

    Riding my bike to the track to do some speed work + abs. Followed by Mexican food and margaritas on the patio and then riding my bike back home to watch The Packers 🙂

    I haven’t done my workout yet today, but after work, I’m going to run 3 miles and then do arms and core work!
