Lazy Sunday?

I can’t remember the last time I had a Lazy Sunday. It seems like I always have a long To Do list on what is supposed to be a day of rest.

Well, at least I get a rest from running on Sundays. Today Ben and I took a walk to get the day started. Before we left I had a couple handfuls of cereal to tide me over.IMG_1518 I love that there is a close path by our place. I was in love with the path in Columbia, MD…. IMG_7856

It was right next to a lake and super tranquil…IMG_7858

This path isn’t as nice, but it’s better than just walking on the sidewalk by a busy street. IMG_1517

Once we were home I made Pumpkin Pancakes. Sunday mornings require a more elaborate breakfast than the rest of the week, don’t you think?IMG_1521

I didn’t measure anything exactly but I made the pancakes with: egg beaters, peanut flour, whole wheat flour, pumpkin, chia seeds, salt, baking powder, pumpkin pie spice and almond milk.

The combination of pumpkin and a little too much egg made these fall apart when I flipped them. They’re not the most perfect looking p-cakes, but they were delicious!

I added sliced banana when they were cooking, but you can only see it on the bottom one.IMG_1526

Topped with almond butter and syrup. Sunday morning pancakes are the best!IMG_1524

I also ended up cutting my carrot juice half and half with orange juice. Much better. IMG_1529 Happy Sunday 🙂

Question: Are you getting any rest today or is it “go, go, go”?

    I’ve been going so hard for over a year. Lots of things to train for. Now that I’m not training for anything and have to take a break from running…I suddenly have a lot of free time. I’m trying to figure out what to do!

    Sundays are always my busiest day. Church, errands, family time, and then I’m pretty much falling directly into bed.

    ummmm all my days are go go go 😉

    but i’m trying to take it easier! it helps now that i’m not a student and i don’t have any work to prepare for the week.

    I made some amazing pumpkin peanut pancakes yesterday! Sundays are my long run days so the morning is never as relaxing. I just finished and had a delicious brunch, now going to meet a blog friend then hours and hours of homework. Soi I guess I get a lot of things done on Sundays, but they are still kind of relaxing (mostly because “homework” really means “napping”). 🙂

    Ooooh. Pumpkin pancakes look great! Were they peanuty from the peanut flour?

    Today is definitely a lazy day. After an 18 mile run yesterday, I’ve earned it. 🙂

    I wish Sunday was a rest day but since going to school and working full time, Sunday is a school work/housework day.

    Yay for rest! I hope you have a refreshing day.
    My husband and I started out this morning with the opposite of rest: an early 8 miler. We’ve been married 14 years and this was the first time we’ve ever run together. Now that the hard part if over, the rest of the day should be restful. Hopefully.

    Today, I have to grocery shop, except I have no pants because they’re in the laundry which is going on now, which had to wait until noon to be done because I was stinking up some workout clothes in the morning. SO once I get some groceries I will happily rest.
