Since we had a big ol’ pot of lentils I decided we needed to make something lentil-centric. I got inspiration from Giada, but ended up doing my own thing.
Lentil Loaf
I mixed :
2 cups lentils (cooked)
1 cup brown rice (cooked)
1 cup spinach (cooked)
Big handful shredded cheese (whatever you like)
2 eggs
1/2 can diced tomatoes
salt/pepper/garlic/season salt
This is what I did:
Cook a bunch of raw spinach in TJ’s ff vinagarette. Then, chop it up. Beat egg. Mix together all ingredients, except egg, and season to your preference. You can taste it at this point and add more seasonings to your liking, but don’t do that after you add the raw egg. Add egg. Mix together and put in a greased loaf pan. Bake at 350 degrees for an hour or until set. My lentil loaf was very moist and took an extra 20 minutes. Let set and enjoy!
I enjoyed it in true meatloaf style – with ketchup!
I just kinda snacking my way through the day…and I realized SNACKING IS NOT SATISFYING! I didn’t feel full all day 🙁
I really need to eat from a plate. If I don’t eat real meals I just keep eating, it’s like my brain or stomach doesn’t realize I ate. (This isn’t everything.)
Dinner was a mix of things…sweet potato fries (from a package, not fresh), lentil loaf and some polenta frozen thingy also from TJ’s.And I convinced Ben that spinach is great in smoothies by making one…
I joke that I have an anxiety disorder, but seriously I need to chill out. I did 20 minutes of yoga today and just felt so much better after. I think I would be really great for my mind and body if I did yoga everyday. I need it, and it’s better than a pill, right? I may make a commitment to this very soon…It may be better than therapy!
