Before my mid-morning client I had a hardboiled egg on the way out the door.IMG_6425 (800x600)

After that, I had 45 minutes to come home, eat lunch and blog. Which brings me here…

Luckily, my favorite lunch doesn’t require any cooking! A massive salad and Popchips is perfect to me.IMG_6429 (800x600)

I realized the calories from this meal were kinda low. Since I have 5 clients back-to-back right now I decided an extra snack was in order Smile IMG_6431 (600x800)

Now I’m headed back to work. I have 4 half hour sessions and one full hour session without a break next. I know it doesn’t seem like a lot, but I have to be “go go go” the whole time so it’s a lot for me.

Then, I have a short break and I think 2 more appointments later this afternoon. Luckily, dinner is cooking up the crock-pot. Ben requested crock-pot chicken again and since it’s so easy I’m all for it.crockpot

    Hi Monica! (I’m new to commenting, but I love your blog.) Our family has a really similar crockpot recipe we use and LOVE. It’s just Chicken breast, a jar of salsa, acan of black beans–added at the end, all cooked up in the crockpot and served on rice…of course with cheese on top. We’re so creative…we call it chicken salsa. haha. Anyway, just wanted to finally comment. 🙂

    I also work at a desk job so I use my lunch to workout! I end up taking about 1 1/2 hours total for lunch (drive to gym, change, workout, shower & change, drive back to work) but I am at my desk a full 8 hours. I eat a snack about an hour before my workout and eat a light lunch when I get back to the office. It takes lots of time to pack clothes for the gym AND pack 2-3 snacks and meals for work each day but I like having my evenings free after 5 PM. That is the only time I get to play with my two kids!

    that chicken looks SO good.
    my sister gave me a crock-pot recipe recently, and i said i didn’t have a crock-pot. instead of saying “oh you could probably make it on the stove” or whatever, her response was “….. well, then you need a crock-pot.”

    How big is your crockpot? I’ve never bought one before so I have no idea what size is right for a two-person household 😀

    I get a 1/2 hour break when I work 8 hours. But I don’t get to choose when I take it, so my lunch can be anywhere from 11am to 3pm!

    I have a desk job, so technically my lunch break can be an hour or whatever I want/need it to be as long as I get all my work down and am back on time for meetings. Unfortunately, this translates to me either eating lunch at meetings, or devouring it in 10 minutes at my desk while reading email or your blog 😉

    As a teacher, I get exactly 26 minutes for lunch. Which is not much at all! Especially when you factor in that’s your bathroom break too! I wish we had more, but I do love getting done for the day at 3:30!

    Oooh, more reinforcement that I need a crockpot.. that’s the same as a slowcooker, right? I should really know these things by the age of 25 but alas..

    My lunch break has been pretty spiradic over the years. My first two schools only allowed the teaching staff about 20 minutes for lunch, the same for students. That’s just way too short for kids, or adults to have to try and eat without causing major digestion issues. Right now, my school allows us an entire hour. Yes, an hour! And I’m in love!

    My lunch break is normally my work out break..so I have lunch while processing clients paperwork usually!

    I almost never take a lunch break–I prefer to work through it and get off earlier! This doesn’t mean I don’t eat lunch, though. I’m just a good multi-tasker like that. 🙂

      I used to work through lunch too. Now, I can only imagine trying shove my face full of food while telling someone to do lunges!

    I usually get 30 minutes for lunch, but I’m such a slow eater that it often takes me 45-60 minutes to finish my lunch! I end up spending about half an hour away from my desk, and then I usually finish my lunch at my desk. Good luck with your clients–would love an update about how the personal training is going! 🙂
