Hello! I really wanted to bring back Meatless Mondays this year but have been lazy about it. I think plant based diets are very healthy. So, I’d like to start making every Monday vegetarian and focus on vegetables and fruits and grains and beans in my diet one day a week.
I think this is an extra good idea because my weekend eats are usually full of sugar and fried food and pizza. Hey, I enjoy every minute of it but it’s nice to get back on track!
So after my run this morning I made my usual egg-centric breakfast.
Mid-morning I busted out these new Chobani flavoris – Chocolate Haze Craze and Salted Caramel Crunch!! I had the salted caramel first and intended to save the chocolate one for tomorrow. Yeah right. I ate that one in the afternoon.
Lunch was a massive salad with beans and more eggs.
I was super productive today and in between emails washed the sheets and bed spread because Vegas barked on it (just a tiny bit on the edge, but still I am upset with him).
Free cat to a good home. His name is Vegas, but he doesn’t respond to anything but deli turkey meat.
Dinner was a simple – I just made mini pizzas on bagel thins that I have. No pictures because my hands were covered in sauce.
Dessert was Arctic Zero with chopped nuts and a little dry oatmeal for crunch and chew.

I’d try meatless monday when I will go on a fat fast sometime but meanwhile there’s still some chicken and liver and chicken liver in the fridge I gotta finish… 😉

I LOVE Pizza too! I used to do Meatless Monday’s…but now it is just a random day in the week. I haven’t been organized enough to have it fall on a Monday lately! I had a salad with hemp seeds, pumpkin seeds and black beans instead of my ‘go to’ chicken!

I don’t eat a ton of meat during the week, but still get a little each day. I could definitely get down with a Meatless Monday some time. Good work!

I pretty much always have meat (usually at dinner). Today I haven’t had any because I’m sick and am mostly surviving off oatmeal and smoothies.

I did not have a meatless Monday, but I did have homemade mac n’ cheese for dinner, so I’d say it was a win!

I am meatless every day, but the best meatless thing I ate this Monday was a sofritas bowl from Chipotle. I loooove their tofu and this was the “buy a bowl today, get a coupon for a free one” deal so I sent some coworkers out in the rain and sleet and snow to get me one.

I enjoyed some left over pavlova for dessert – whipped cream, topped with blueberries, paw paw and lychees. Super yum!

Made some homemade guacomole today that tasted so delicious and fresh from perfectly ripe avocados 🙂 and after seeing those new Chobani flavors I know what I’ll be on the hunt for on my next trip to Wegmans!

I had leftover chipotle for lunch today and it was amazing 🙂 I have meatless days a lot… I’m not a vegetarian but I’m just not a big fan of meat, especially when I have to cook it myself. eggs are my go-to 🙂

Mmmm vanilla maple. That flavor sounds amazing. So far the best thing I’ve eaten today is an almond butter Perfect Bar. To be fair, I havent really eaten much of anything yet, but that’s by far the most delicious thing!
