Mexican Meatless Monday Ortega Omelet

I’m celebrating Meatless Monday by bringing Mexican Meatless Mondays back this week! Hopefully, I’ll get on roll with this series again. It’s a great way to make Mexican food healthy Smile

I always have Ortega green chiles in my pantry. I add them to burritos, beans, eggs and more. They are NOT hot or spicy at all. The can even says ‘mild’ and it is for real. But, they add a great flavor to dishes and I love it!

Ortega Omelet

{Serves one – Vegetarian – Gluten Free}

Ingredients:

  • 2 eggs & 2 egg whites
  • 2 Tb. diced green chiles
  • 2 Tb. green onion
  • shredded cheddar or pepper-jack
  • avocado
  • salt & pepper

Directions: Mix eggs (I always add a dash of milk to make it fluffier) and cook until though ‘omelet style’. Season with S&P.  Stuff egg with green chiles and onions, fold over and top with cheese and avocado.

I have a sad panda. Literally.

I bought a cute panda spoon from China and just found it broken. I wrapped it up in my clothes to keep it from breaking and put it through the wash on accident. #SadPanda

      Tonight for dinner might be a salad from Panera or Chicken Maison’s chicken kabobs. I love omelets or scrambles any time of day! I had an veggie scramble with green chilies on Sunday for brunch….MMmmmm!

      I too do meatless Mondays. Last night I made something I call the Gourd – spaghetti squash, zucchini, carrots & marinana sauce in the crockpot. Posting recipe soon!

      I don’t know what’s for dinner yet. I was actually thinking quinoa mixed with scrambled eggs and cheese…(Don’t consider me “meatless” though. I have a good amount of chili chock full of cow for lunch) but I don’t know if the BF and daughter will go for it. I may add kielbasa to theirs……

      What a cute, yet sad, little penguin…:(

      We had meatloaf, mashed potatoes and green beans. And, my 13 year old baked a cake from scratch….so it appears I made up for my light eating on Sunday by indulging on Monday. 🙂

      Its okay, tonights workout is a track workout so ill burn it off. Lol

      The omelet looks amazing btw!!

      I love me some green chiles as well! I have been on an egg kick every morning mainly because I am going grain free. Loving it so far! For dinner tonight I made buffalo chicken in the crock pot and added it to a lettuce wrap. TO.DIE.FOR!

      I had a huge chicken spinach salad. Then I got hungry again and had a flatbread with honey and cinnamon – and I probably will go for round 3 here in a little bit. Thinking about frozen yogurt 🙂
