My Lazy But Healthy Dinner

My Life· What Runners Eat

1 Mar

Hi! I was MIA today because I’m finishing up a few projects and I got my car windows tinted. It was a gift from my brother that I had been putting off for the longest because I’m lazy. It’s so fancy on my lil un-fancy car!

In other laziness news… I bought this ready to eat turkey bacon since it was on super sale yesterday. I think it’s pretty good, but I also don’t really like ‘real’ bacon so take my opinion with a grain of sea salt on that one.

turkey bacon is not real bacon (800x450)

And who says fast food is unhealthy? I got these two items below and had dinner in minutes!

Again, I was feeling lazy and didn’t want to cook up a whole fancy thing, but wanted a lot of good food. <- that’s the story of my life.

Kale salad mix (comes with the dressing, cranberries and nuts) + a rotisserie chicken = Dinner.

Miracle Challenge

One of the projects I’m working on right now is with the Miracle Challenge.

Miracle Challenge is a 27-day wellness challenge that encourages you to achieve fitness goals, while fundraising for kids in your Children’s Miracle Network Hospital. Over the course of 27 days you will accomplish 27 different mini-challenges all connected to your fitness passion.  Along the way, you are encouraged to raise at least $10 per day on behalf of kids in your Children’s Miracle Network Hospital.  Why?  Because while we get fit, there are kids in your local CMN Hospital who can’t go for a walk, a run, or a bike ride.  They are fighting scary illnesses like cancer, or recovering from an illness we can’t even pronounce.  So let’s help them get better, so one day, they can join us on this fitness challenge!

go to throw down meal is BLTE’s (bacon, lettuce, tomato, egg). we love those things! that salad mix looks really good though. I usually use those rotisserie chickens to make homemade chicken noodle soup

We get that exact same thing from Costco almost every Sunday. Although I don’t call it lazy, I call it efficient. 🙂

I sauté whatever random veggies I have in the fridge, crack an egg over it and if there is leftover rice that goes in too. Or overnight oats without the overnight.
I have an older VW Passat with 198k miles. It is never allowed to die 🙂

We almost always have stuff on hand to make burritos or spaghetti 🙂 I drive a blue Prius and I love her.

I love that salad from costco – I buy it every week and it’s one of my go-to quick eats! Another thing I love is potatoes with cashew cheese!

I have a chevy cruze – gets awesome gas mileage!

I have a Subaru Forester. With snowy winters I need all wheel drive. I used to have a Jeep but it got old and would break down a lot unpredictability and literally died on the highway on the way to the dealer to get my Subaru.
I often have roll ups as a quick dinner. I take a slice of turkey and a slice of cheese stuff some spinach leaves inside and a squirt of mustard and roll it up.
