Peanut Flour Pancakes

Recently I picked up Peanut Flour from Trader Joes. I’ve been excited to try it ever since. Finally this morning I made my highly anticipated Peanut Flour Pancakes.

IMG_1200 Recipe:

– 1/4c peanut flour

– 1/4c oats

– 1/2c egg beaters

– 1/4c almond milk

– 1/2 tsp baking soda, baking powder

– dash of salt, cinnamon, chia seeds

*I think this makes a pretty small serving, so next time I would probably use 1/2 a cup of flour and oats and increase the other ingredients accordingly.

I mixed it up in the blender, cooked it up in a pan and topped up with bananas, raspberries, almond butter and syrup. IMG_1217

Served with iced coffee and a few stolen bites of Ben’s eggs 🙂

Yesterday Ben and I ventured to my mom’s for a visit. I was excited to see Roxy.IMG_0003

Ben was excited to see ripe avocados from my mom’s tree. He’s not the biggest fan of nut butter (I know, I can’t believe I fell in love with him) so this is one of the few healthy fats I can get in him. IMG_0002

He just cuts it in half, adds salt and eats with a spoon. I think he’s addicted. IMG_0001Before we left for my mom’s I had a big salad with tons of random toppings and TJ’s peanut dressing. I dunno this was kinda of like a second lunch, kinda of like a big snack…IMG_1197

Plus  some more Annie’s bunnies before giving the rest of the box away in hopes that I can control my cravings for sugary little cookies in the shape of rabbits without going through withdrawals.IMG_0005

My mom and I walked the dogs and then collaborated on dinner – fish, rice and salad.

No Saturday in September is complete without a trip to the local self serve frozen yogurt joint. The closest one to my mom’s is Blizzberry.

IMG_0011 I got a few different kinds of fro-yo and went to town on the toppings. I think it’s all about the toppings! IMG_0012

My little brother, Matt, went crazy with the toppings too. That’s how we roll in Pico.

Now I must get to studying. I have two tests this week and am still catching up from my missed week of school! I also hope to clean a bit today, this place is a mess! Like embarrassingly messy 🙁

    Gasp!!! An avocado tree in your mom’s backyard?? You say that like it’s a common thing. Well, um, maybe it is where you are??? Ok, moving… STAT!!!

    I love how Ben eats the avocado. He is smart. I need to try that! My favorite way to eat avocados is in guac. YUM!

    I just saw that flour at TJ’s but since I don’t bake, I passed on it. But I love the idea of using it for pancakes! You’re a genius! 🙂

    Mmmmm! I LOVE eating avocado strait from it’s skin/shell! A little salt? Perfection. 🙂 Apparently Ben knows what’s up! Although, who DOESN’T love nut butters? Really.

    I don’t know how I’ve missed peanut flour all this time! I’ll have to look for it now!

    And I’ve never been to a self-serve frozen yogurt place — I REALLY want to. Sounds like the best thing ever!!

    I love adding avocados to smoothies, but I couldn’t eat them by themselves.

    Oh I bought that peanut flour on a whim and have been looking for a way to use it. These look great! Plus the peanut flour is the only baking ingredient at my boyfriend’s apartment so i’m glad that the recipe is so simple!

    Good luck with all your work – I am also trying to catch up on missed reading from last week PLUS finish this week’s work…gah. So much for a weekend!

    Matt and I cleaned the bathroom and kitchen yesterday – I figured those were probably the messiest rooms of the apartment.

    Ben’s avocado looks amazing – I wish I could get avocados off a tree in my mom’s backyard!

    good luck on the tests! i just read your reply to heather about how the pancakes were and it’s disappointing that they weren’t really peanuty!

    and i had some fro-yo from a legit place when i was in philly and i wish it would become a big presence in new england. i’m jealous 🙂

    So how were the pancakes? Could you taste a difference with the peanut flour?
    Cleveland seriously needs to get on board with this self serve yogurt business. It’s really no fair.

      They weren’t very peanut-y, which surprised me. I don’t think they were much different from using whole wheat or oat bran (both of which I’m used to).
