Pumpkin Vitatop Parfait

Remember not too long ago, when I shared my knowledge about the new Vitatop flavor being Pumpkin? Well, I also “shared my money” with the company in exchange for some of their wonderful new treats.

This my friends, is a Pumpkin Spice Vitatop. On it’s own it’s just okay. I’m not a big fan of the pumpkin seeds on top. They just don’t “go” with the flavor of the cake.

But when paired with a few RER faves you’ve got the world’s best snack… A Pumpkin Parfait

I mixed some canned pumpkin with pumpkin pie spice and splenda and warmed it in the microwave. Then, I layered the pumpkin mix, greek yogurt, crumbled pumpkin vitatop and Run, Eat, Repeat Smile

Finally top it off with a big dollop of Peanut Butter and you’ve got yourself a life changing snack / meal / bribe / new obsession.

In comparison, my lunch was lame. Actually, in comparison my entire life is lame. IMG_6056

    Ooh, I have never seen pumpkin flavored vitatops. I really like the chocolate ones though.

    I was inspired to use one of my banana nut vita tops to make a similar parfait… It may have changed my life.

    I literally looked at their website yesterday and noticed this flavor! I’ve never had any of their flavors before, but seeing the pumpkin made me want to go out and get it 🙂 When I see it, I definitely will!

    I had never hear or seen vitatops around but I found them at Target…I was Christmas shopping and refused to buy anything not on my list…can’t wait to get back and grab some. Which are your absolute favs??

    Oh I sooooooooooo want to try the pumpkin flavor ! Your parfait looks good!

    I want to try the mint chocolate vitatop too, I might have to order online as well!

    They are making pumpkin now?????? Get out!! I still can’t find 1/2 of flavors. The only ones I’ve ever seen at our stores are banana nut and deep chocolate.

    That parfait looks might incredible!! I’ve yet to purchase vitatops… I don’t know why… when I don’t hesitate to purchase $1.49 Larabars like they were twenty cents.

    Oh, wow. That looks delish. I think I’d like the seeds on top because of the added *crunch!* I don’t think anything would look exciting after the parfait…especially in the lovely glass! Why haven’t I made parfaits…
