Skinny Waffle Taco Recipe inspired by Taco Bell’s Waffle Tacos

Hello! Well, I had some fun last night!!

This morning I started the day with a nice walk. When I got back I flipped on the TV and went to make coffee.

Then, I heard a commercial for the new Taco Bell Waffle Taco. Boom. I knew what I was going to make for breakfast.

I am a sucka for anything “NEW!” at restaurants or in stores. So I admit I want to try the waffle taco. taco bell time

But, I’m pretty sure my home-made version is probably just as good (or better) and a lot lower in calories and fat.

Plus – you can make it gluten free with a g-free frozen waffle! Or whole grain with a whole grain frozen waffle. #WaffleWinning

Skinny Waffle Tacos

Ingredients:

  • 2 frozen waffles
  • 1 cup egg whites (or 2 eggs)
  • 2 lean turkey sausages (plus two for eating while you cook)
  • toppings: Syrup & Sriracha or Ketchup or Hot Sauce

Toast waffles. Cook up sausage and eggs (separately). Divide 1/2 egg and 1 sausage into each waffle. Drizzle with syrup. Drown in Sriracha.

Two of these breakfast tacos add up to less than one Taco Bell Sausage Breakfast waffle taco at 362 calories! I added the extra turkey sausage to the final calorie count though…

    half a grapefruit, one slice of GF toast and two soft-boiled eggs from my friend’s chickens! 🙂
    they are so much tastier than the store bought eggs; the yolks are super rich and delicious.

    Those look great! But you forgot to add the syrup to the calorie count… As a fellow runner/eater/calorie-watcher, just wanted to point it out for accuracy.

    Scrambled eggs cooked over pan-grilled tomato slices with sprinkled sharp cheddar in it. Yum!

    DUDE! Hubby and I made our own version of the McGriddle for breakfast this morning. It was the bomb.com
    Two pancakes (I used Trader Joe’s buttermilk pancake mix which is good!)
    slightly fried egg
    1 slice of bacon
    1 slice of cheese

    Assemble like a sandwich. Poor some maple syrup, ketchup or siracha on top and enjoy.

    BTW-I call everyone dude so I hope you are not offended. It is a CA thang.

    That looks really yummy! My son is GF so we love Van’s waffles around here! It was pancake Sunday in our house so we had banana walnut pancakes with maple syrup, so good!

    Squish and I had some cheesy egg scramble and a sliced apple each for breakfast. But I need to pick me up some gluten-free waffles and give this a try! Seems like a great on-the-go breakfast for the weekdays.

    You are genius to create a lower cal version!!! But I can’t get past the idea of sriacha and syrup together. must be an aquired taste 🙂

    I had a superpretzel before my 20 miler and an egg wrap with sausage peppers onions and mozzarella cheese after!! Now I want pancakes!! 🙂
