Spicy Pita Pizza

Hello and Happy Friday!

This morning I ate a quick breakfast of an Ezekiel muffin with almond butter on one side and ICBNB with cinnamon and stevia on the other. ezekial muffin

Then, I rushed off to Kick Boxing. I am obsessed with KB! But, the morning classes are only offered twice a week – Mondays and Fridays. Mondays are a running day on my plan. I’m trying to figure out a way I can hit both classes and keep my running up 🙂

After KB I went grocery shopping and my stomach was growling! I ended up with a few impulse purchases because I was shopping hungry. Oh well.

On the way home I wanted one thing for lunch = pizza! I was all set to make a pita pizza, but I got home and realized we don’t have any tomato paste or marinara sauce 🙁

It was almost a disaster until I saw this can of Rotel…IMG_6974

I decided to use this as the pizza sauce and on top I layered chickpeas and cheese. This was a little spicy which was perfect for me! I usually put Red Chili Flakes on my pizza and this time I didn’t have too. IMG_6971

  I also stole a few strawberries from the package on the way home! Now I need to let my food settle ‘cause I still feel hungry. I ate too fast.

I dunno why, but I am really tired right now? I think a BIG DD iced coffee is in my future 🙂

    When you first started running again after your injury, did you experience any fear? I haven’t run for two weeks which I know isn’t long at all. My knee is finally feeling up to the run, but I feel scared. So weird. Just wondered if you experienced anything like that.
