Sweet PB Chickpea Snack

I don’t know why or how or where my love of chickpeas first got started, but I am obsessed with this bean. I used to buy the most massive cans of them from Costco in Maryland, but sadly they do not sell them here Sad smile

Luckily, I don’t have to relegate my chickpea eating time to meals or savory snacks because I’ve got a sweet chickpea recipe today. IMG_6302

Sweet PB Chickpeas

All you need are five six ingredients –

1/4 cup peanut flour

1 Tb. Maple syrup

1 Tb. Olive Oil

Dash of salt and cinnamon (I use a lot!)

A can of chickpeas (or garbanzo beans)IMG_6292

Mix the first five ingredients together. Then, pour the mixture on a can of rinsed chickpeas and toss to coat. Try not to let them all squish together when you first put them in or they’ll stick a bit.

Roast at 400 degrees for 30 minutes or until charred to your liking, tossing periodically. IMG_6294

The beans are packed with fiber and protein, but I love that the peanut powder adds an extra punch of protein too!IMG_6296

    I have been using raw, canned, reduced sodium chickpeas as a snack and have lost 40 lbs. Thanks for another way to eat this wonderful bean.

    Isn’t the big can of chickpeas the best and it’s less than $3. Peanut flour is pretty great too. I can’t wait to try this recipe. Looks delicious!!

    I think I’m going to try that- I’ve been looking for other sources of protein, since I don’t really like eating meat, more then once a day, and I need protein pretty much every time I eat, so this’ll be good ^_^
    Oh, and random (but this recipe made me think of it for some reason)- remember those Nutella to-go things you said Ben ordered a while back? (I just remembered today) a month or so ago, I was running, and on the sidewalk was an empty Nutella to-go, and I thought of Ben! Hehe! XP

    Second recipe I’ve seen tonight using peanut flour and I conveniently have an entire open bag that’s only bee used once.

    I totally need to track down Costco chickpeas. This could be dangerous.
