Taco Casserole For Those Leftover Corn Tortillas

How’s it going?

I am exhausted. Which is weird, because I’m never tired. If it wasn’t for the fact that I woke up at 3:30am yesterday and 4:30am today and ran a marathon in the middle, I’d think I was dying. Dramatic. Maybe.

I took it very easy today because I have the f-ing Catalina Wine Mixer  this weekend! Wait. I mean the Catalina MARATHON. But there will be wine after the race.

Today I hit up TJ’s for a few things and somehow came back with those super cute daffodils and some sweet white wine.

And I even have a recipe for you today!! This is a Meaty Mexican Monday dish that is going to save your life.

Okay, maybe that’s a tiny bit of an exaggeration. But this recipe is going to save you a lot of frustration staying up all night trying to figure out what to do with all your corn tortillas.

Why is it the smallest pack they come in is 60?!?!?

And then they get dry and stale and you can’t use them for tacos because they just break. No se puede.

This recipe is an easy, healthy way to use those tortillas in a casserole.

Taco Casserole Recipe

{Gluten Free – Serves 4}

Ingredients:

  • 7 corn tortillas
  • 16 oz. ground turkey or chicken
  • taco seasoning
  • 1/2 cup diced onion
  • 1 can black beans, drained & rinsed
  • 2 cups salsa
  • shredded cheese

Directions: Cook onions until translucent. Add ground meat and season to taste. You can use a taco season packet or your own combo.

Slice corn tortillas into bite size pieces. Place in a big bowl with cooked meat, beans and salsa. Mix and pour into sprayed 8×8 pan. Top with cheese and bake until cooked through.

I cut it into 4 BIG pieces.

Suggestion: Top with avocado or sour cream. Enjoy!

And now I have some sad news… first I bought this ice cream as a victory lap today. I’ve never had Ben and Jerry’s Chubby Hubby before and was pretty excited. But it’s not my favorite thing?!?! I’m just not digging the pretzels because they remind me of malt balls or something? Plus, I really just love fro-yo because that was always my post-dance performance/honor roll/other treat growing up.

No one panic though, I’ll still try and eat it. Man my life is tough.

Okay. But in real sad news… I decided to cancel cable and now I don’t have access to my favorite TV shows Sad smile I thought I wouldn’t really care but I DO! I DO CARE. A LOT!!

      You can also get Digital Rabbit ears off amazon for $10 and get most if not all the broadcast networks.

      CW, ABC, NBC, CBS, and Fox and the picture is fantastic too.

      I, too, gave up cable and bought an antenna ($30 @ Best Buy). I get about 90 channels, about 1/3 in English, and about 2 that I very occasionally watch. But when I’m somewhere with cable (sitting in a doc office last week waiting for my mom), I am reminded how much I like watching The Food Channel (and all the chefs thereon), and wondering if I wouldn’t enjoy having it again. My issue — aside from the $30/mo — is that they’d have to send a technician to the house to hook it up and make it work. I don’t have a 15-year-old handy and I cannot make the picture come out of the tv. Gack.

      On-line websites with all your favorite shows……for free!

      Google “project free tv” & “coke and popcorn”. I live in Central America and am able to keep up with all my shows! the best part is you stream, not download.

      My boyfriend and I have not had cable in 3 years. We do have netflix at least. It helps us stay active and not lounge around watching trashy tv all of the time. But don’t get me wrong, I love my trashy t.v shows, but only watch them when over at a friends house.

      That recipe looks good, quick and easy!

      I know a lot of people who go without cable. I mean, I will stop buying food before I cut the cable because… well… I can forget I’m hungry if something good is on tv.

      We got rid of cable, but we still have internet and we watch cable via Aereo! It’s still way cheaper than having a cable/internet package, and you can still watch (and record) most tv shows! We still have Netflix of course, and I’m actually considering Hulu+!

      That cassarole looks great! I will be making it! I would LOVE to get rid of cable. In fact, when I separated from my ex, I had every intention of not getting it, but I have kids that are used to it. Now, I’m not sure I could get rid of cable. About 90% of the TV I watch is from Bravo and the Food Network. Not sure how I’d survive without my Housewives (espcially BH). Haha.

      I cancelled my cable 2 months ago and I really like it. Other than football I really, really miss Chopped (best show ever) and House Hunters. If I want to watch something I usually go to the gym to workout and watch TV there – I spent two hours and 15 minutes on cardio machines watching the Olympics…oops.

      Ditched cable about two years ago; honestly we only miss it during football season. I don’t watch TV at all (working mom, slaving for my family); reading on my Kindle and running is about all the fun I have time to indulge. My hubby and the kids watch Netflix and Hulu Plus ($8 each/mo). Once in a while they will stream from Amazon and you pay per movie/episode, etc. We recently bought an antenna for the TV. They’re not rabbit ears like the olden days–it looks like a flat square that you stick on the wall or window. It’s pretty cool–for about $20 (to purchase), you can get the big 5-6 channels for free. Sometimes it’s a little slow, but you deal with it.

      Honestly, once you get used to less TV, you’ll free up a lot of time and wonder why you watched it in the first place. I don’t miss it AT ALL.

      Back to back marathons??!!! Get it girl! 😀

          It is difficult at first…but I think the streaming thing is pretty cool. Does Ben have a gaming system? If not, you’ll have to spring for Roku I guess. You can probably get an open box one cheaper through Amazon Warehouse deals. It’s a one-time purchase so…
          Thankfully (insert sarcasm) my 12 yr old son has a PS3 so we are covered in the gaming system department.
          Find something fun to do with some of the extra $100 you’re saving every month! 🙂 hellooooooo Yogurtland!

      i have cable for 2 channels…TLC and HGTV!
      If you lived closer i’d just always ask you to make 2 of what you’re having. I’m so lazy to cook but all your recipes look yummy and satisfying.

      We have a roku box that streams hulu and netflix directly to your tv. It works just like a cable box with a remote. We also have an antenna. We cancelled cable abotu two months ago. You get used to it. I liek it a lot better now.

      I have cable and honestly, I only watch Bravo and E. I have apple tv and it’s the greatest thing I ever did. I could cancel my cable now, but hadn’t thought about it until I saw your post. Two marathon weekends back to back? Wow…rockstar!

      We canceled DirecTV after they dropped WeatherChannel. Bravo has so much content on its website, I don’t miss the TV. Also, lots of good sites with written summaries let me keep up with a few shows without taking so much time to watch them. TelevisionWithoutPity.com is good. Also (don’t laugh) soaps.sheknows.com for my guilty pleasure, Y&R!

      I haven’t read all the responses, so I’m sure others have suggested this…

      I have a ROKU, which connects to your wireless internet. The cheap version of this is around $40. You can get Netflix and HuluPlus, and a lot more apps that I don’t have, through the ROKU on your tv. Both subscriptions cost around $15/month together.

      No cable at my place either. The way around it is a mixture of things: 1) Netflix…for real. 2) Hulu Plus. You can still watch new shows, just the day after (unless they are on CBS). 3) An antenna. We only get maybe 5 decent channels when they decide to come in…but it’s handy for things like the news and specials. 4) Torrent online/ watch on the network’s website. Even if Torrenting is illegal, shows like Game of Thrones do as well as they do because of it. No one is gonna spend that much on HBO when all they watch is one show!

      We haven’t had cable for about a year now and I actually don’t miss it, except for football season… That was tough. We usually just binge watch on Netflix or Hulu. Also, you should still be able to get regular cable for free (maybe just buy an antenna), and you’ll get your regular nbc, abc, cbs, fox and pbs. Not too bad.

      This recipe looks awesome. I have a suggestion- you should get Google Chromecast! It’s only $25 ish and works well with Netflix, Hulu, etc. it’s way easier to watch shows on your TV via your computer.
      Kind of a cheap (but amazing) Apple TV.

      I crisp up my corn tortillas in a dry skillet and make my own chips for hummus. Two small corn tortillas crisped up is the perfect measurable amount of ‘chips’ for a snack. Because we all know if a bag of chips is open, no one actually measures or counts them out! ha.

      We went cable free almost three years ago. Netflix and other streaming sources work just fine. The bonus is that we end up watching older shows that we missed in years past or other channels we didn’t have when we paid for them!

      no cable here, we use apps to watch tv on the iPad, Netflix and stream online.

      When I cancelled 5 years ago, it was over $100 a month…can’t imagine how much it is now

      I have cable, but I keep thinking about canceling it because it gets so expensive. I watch more Netflix than I do regular TV, but I haven’t been able to convince myself to just get rid of cable all together.

      We call that Mexican Lasagna because this white girl can’t roll corn tortillas without them cracking.

        I made enchilada casserole that is probably like your Mexican Lasagna – with the tortillas layered instead of cut up. So good!

      Great recipe, very simple! I currently have cable but we are thinking of cancelling. I fear I will miss some of my shows too. And even though you can watch stuff online, sometimes you just want to watch rerun of a show that happens to be on when you’re bored or busy working on something else.

      Don’t really watch TV. Just Netflix.

      Another recipe to use up leftover tortillas is migas. Basically tortillas fried into chips, then cooked with scrambled eggs and whatever else you want (chorizo, onion, jalapenos, cheese). Some of the tortillas get a bit softened from the egg, while some bits stay crispy.

      I do have cable but I never have that much time to watch TV so most of my tv watching is marathoning on netflix. Hehe, marathoning. Also, the exhaustion could be from the loss of an hour. The time change always messes with me. I literally hate it. Have you tried Ben and Jerry’s Chocolate Therapy? It is insane in the best possible way.

      I cancelled mine a few months ago. We just have Netflix and Roku now. Most other things are available online. Amazon Prime offers a lot of options to watch online, too.

      I have some friends who cancelled cable and watch TV online, I guess there are sites where you can do that (for free?). I have no idea really because I would never ever.. ever… cancel cable. I’d rather not eat, or not buy another pair of running shoes (?!?).

      No cable, no TV. I watch shows on Hulu or the network sites, and there’s also Amazon Prime and NetFlix. Lots of options, you just have to learn patience because you’ll wait a couple days or weeks for the episodes to be posted.
