I had two leeks that were on their last day in the fridge. Even though I only recently discovered leeks they are my new favorite veggie! I couldn’t let them die in the trash – they deserve a grave in my belly Winking smile

I cooked them up with a veggie mix that was also on it’s way out and some eggs. I love egg scrambles! Topped with lf cheese, hot sauce and ketchup.

Served with an English muffin – one with butta, one with pumpkin butta. And a dark chocolate calcium disk for dessert.

I grabbed a pear mid-morning to fuel me for some errands. This was the best pear I’ve had in a long time!

    Have you ever been to Pearblossom in the high desert? The have ” u-pickem” pear orchards up there. It’s like jaking bites of honey.

    The recipe that introduced me to leeks is still my go-to recipe for leeks: Vegetarian Times’ Sweet Potato and Leek Gratin. So yummy!

    That said, I definitely need to try them in an egg scramble! Looks delish…

    I can’t believe how sunny and green it is in that last photo! Wanna trade places? I’m sure you really miss the cold/ice/snow. Just admit it! 🙂

    P.S. I don’t think I’ve ever had a leak before, but now I want to try it. What does it even taste like?

    wow. that scramble looks amazing. mainly the cheese and hot sauce on top. i need to buy more calcium discs.. just ran out. or, in your case, calcium dishes 😉 haha i love typos.
