Hello! How’s it going? We hit up an Earth Day festival yesterday and hugged some trees and also ate some ice pops. You know I chose the Watermelon Cucumber one!

I am pretty in love with wearing rompers in Florida. It’s so hot here and these are so light and easy breezy!

This blue romper with a cap sleeve is awesome because I love to have a little cap sleeveage when I can to avoid too many shoulder freckles. (I’m down with freckles, just try to be mindful.)

Vegetable Pop Quiz!

My brother texted me yesterday that he finally watched Forks Over Knives. I am pretty excited about it because it started a conversation about food. (It’s also on Netflix.)

In the past I would ask him “What vegetables did you eat today?” to check in and see if he ate any and/or if it would start a convo about healthy food. Most of the time it didn’t, but I liked asking that question because it is no big.

I read the China Study and saw the movie a while back so I am all about the message of eating a plant based diet. So in honor of this occasion I wanted to share my favorite Meatless Monday Any day Recipes!

    Last December I watched Forks Over Knives last December along with other related movies on Netflix. I started a plant based diet on 1/1/2015. It’s really changed my thought process on food and choosing what keeps me healthy, as my labs showed a HUGE change last month. If you get a chance, I recommend watching Fed Up.

    So far I’ve only had bell pepper and broccoli in my omelet this morning. But for lunch I have (homemade!) tomato soup with celery, carrot, onion, and diced tomatoes. For dinner I’m making Skinnytaste’s Lomo Saltado that has bell peppers, red onion, tomato, and potatoes in it. Jalapenos too. That’s a veggie, right?!

    Mmm, I like this game. Yesterday, I ate spinach, onion, green pepper, zucchini, cauliflower, and potato (if that counts).

    We make ice lollies at home using a Zoku Quick Pop Maker and it’s fantastic! Last week we had watermelon and kiwi ones which looks just like the one in your pic. Cucumber sounds better than kiwi, but my husband HATES cucumber. Very odd.

    Great thing about making them at home is that you know they’re just fruit – nothing else!

    I started getting produce delivered every week from New Roots Organics (in Seattle), so I’m getting way better about snacking on veggies. Today I ate a salad with radishes, cucumber, and lettuce, along with a carrot for a snack and zucchini and leeks with my dinner. BAM! Now… if I only stopped eating popcorn all the time…

    I had a tomato, fresh moz and basil sandwich from a local sandwich shop, someone was running out at lunch and even though I brought my lunch, I couldn’t resist.

    I need to watch that again. Hmm I had a kale and spinach salad with carrots for lunch and a veggie burger over roasted Brussel sprouts, broccoli, and cauliflower for dinner.
    Popsicles on a hot day are legit.

    I had shredded zucchini in my oatmeal this morning, a small sweet potato after my run, and just had a salad with spring mix greens, beets, green pepper and tomato. I am a veggie fool everyday.

    i am avoiding seeing any documentary that will make me want to be vegetarian because i enjoy meat too much. Today my veggies consisted of lettuce on a sandwich. #fail. but yesterday i had grilled zucchini, asparagus and portabello mushrooms after running a marathon when i could have eaten something super unhealthy. i just wasn’t feeling’ the veggies today.

    i havent seen forks over knives, but i recently found the Slate podcast series table to farm and it really got to me. i try to eat vegetarian during the week, but dairy and eggs are problematic too and i’m not up for being vegan. ethical eating is hard! i guess every little bit helps though.

    as much as I would love to watch all these documentaries about meat/how animals are treated, I just cannot do it. I know that I rely too much on meat to change. But I try to eat as little as I can.
    Today I have had mixed green salad w/broccoli slaw mixed in, cucs and tomatoes w/quiona patty made w/red peppers, spinach and shallots YUM!

    I LOVED Forks Over Knives! I watched so many documentaries but that was the one that finally pushed me to become vegetarian and eat a plant based diet. I honestly feel so much better!

    Saw Forks over Knives – I’m actually plant based since 1/1/2014 although I’ve always liked veggies and have never been a big meat eater. Parting with cheese was tough at first but totally worth it!

    I made these Vegan enchiladas over the weekend – the whole family LOVED them (including teenagers!)

    Do chocolate chips count as veggies? If so, I had them on my oatmeal for breakfast 😉 And I had fajitas with lotsa peppers for lunch… That is probably a better answer!

    I have had that movie in my Netflix list for a long time but still haven’t watched it. I think I’m afraid it will make me not want to eat meat anymore when I love it so hahaha.

    I had a salad for lunch (iceberg, spinach, tomatoes, cucumbers, tomatoes, olives, chickpeas) topped with a hard boiled egg, cottage cheese and a splash of olive oil and vinegar!

    Spinach in my smoothie today and peas with lunch. Been a pretty green day so far.
