I had half a can of pumpkin hanging out in my fridge and wanted to do something new with it. I have my usual breakfast round up of pumpkin oats and pumpkin pancakes, but I wanted an orange snack today.

So, I dreamed up this sweet pumpkin-y pudding.

Pumpkin Spiced Protein Pudding

Ingredients:

  • 1/2 c canned pumpkin
  • 1/4 c milk of your choice
  • 3/4 scoop vanilla or vanilla chai protein powder
  • 1 tsp chia seeds

I’ve had this vanilla chai protein powder a company rep sent me for a while and this is the perfect recipe for it! But, you can use regular vanilla powder and add a little extra spice for flava. I used A LOT of extra pumpkin pie spice by accident. I didn’t realize that jar doesn’t have a sprinkle top…

Were you using the TJ’s Pumpkin Spice by chance? I do that ALL of the time! I always think there is a top on that thing and end up over spicing my pumpkin flavored foods. That’s so deceiving!

I think I’d add an egg into it and make it into cookies instead. Cold pumpkin doesn’t sound too good.

Im not gonna lie Monica, I thought for sure you were posting a picture of some cat food in a bowl for us to try to make but wanted to name it differently :) Ive never tried cold pumpkin…could you heat it up when you are done refrigerating it?

Yeah, I actually like it room temperature and don’t put it in the fridge to set. But people freak out about that, so I figured I’d tell them not to get food poisoning.

I’ve totally done the same thing with a non-sprinkle-top jar… and it was the ground white pepper! My food came out SO spicy and peppery that day, haha.

I bet the spice made it better. I’ve been trying to incorporate more whole pumpkin into my diet but it’s not as tasty as pumpkin pie filling. Tear. I add so much spice and vanilla to mine it’s ridic.

I love all things pumpkin but i draw the line at the pudding. :) Sorry but it looks just like canned pumpkin, I couldn’t down it. Love that you were creative rather than throwing it out though.

Gotta try this one…I made your greek yogurt 5 ingredient no bake pumpkin pie last year for the holidays and it was a huge success with my family…looking forward to making it again! :)

Your spice fail is great. I do that with the red pepper flakes- NOT a nice mistake. Oh, rhyme!

I can’t find a protein powder I like, but I’ve heard good things about vega, specifically vanilla chai. What do you think? Note: I didn’t like Sunwarrior, sadly enough.

Don’t listen to those guys, pumpkin pudding is amazing!
I like adding pumpkin to sugar-free butterscotch jello pudding. Then you can use almond milk and it still comes out to a pudding-like consistency! (Normally jello pudding doesn’t set with non-dairy milk)
