Trader Joes Broccoli Slaw

I had a short shift at work this morning. So far my new job is going well Smile I’m trying to learn as much as I can and make friends. I don’t have any clients yet, but am doing assessments and orientations and stuff. office-workouts-workplace-ecard-someecards

After a quick post-work errand I rushed home to make lunch. I have been craving my favorite “TJ’s Broccoli Slaw with egg and other random crap I through in as I see fit” dish. Yes, that’s the official name of this recipe. IMG_0694 (800x600)

I just cook up onions, mushrooms and the whole package of slaw…IMG_0684 (800x600)

Cook it down a bit.IMG_0686 (800x600)

Add peanut sauce or make your own with PB, sriacha, soy sauce and maple syrup.  Then, add cup o’ eggs.IMG_0690 (800x600)

Cook through and garnish with cashews.IMG_0693 (800x600)

I thought dessert would be a good idea. Because when isn’t dessert a good idea, right?IMG_0699 (600x800)

I have a writing project to finish then, I’m headed to the beach for my running group this afternoon. The drive is definitely getting old, especially with the cost of gas right now! gas is a nut

      Broccoli slaw rocks, it can be added to so many things!

      I gotta laugh at that picture of the gas prices. It totally feels like that.

      I love broccoli slaw. Sometimes I add it raw to my salads, but usually I saute it like you do. My daughter loves it, too; between the two of us, we can eat a whole bag in one meal. I think I’ll try it with a peanut sauce. Yum.

      I make a recipe similar to that with broccoli slaw–I have never added cashews and am real excited to make it again so I can!

        Oh, I should have added that I put cut up turkey deli meat for extra protein (inspired by you) 🙂
