First, I wanted to share this quote I read today…marathoners are the wrong group to target

I tweeted about my dinner and a few of you asked for a recipe. This is an old standby for me, so I thought I had already posted it many moons ago. Guess not.

Enchilada Casserole Recipe

1. Make Crockpot Salsa Chicken. (4 chicken breasts + 1 jar salsa in pot until done)crockpot for salsa chicken

2. Shred the chicken. Do not pass go, do not collect $200, do not decide to make tacos instead because it’s easier.

3. Grab an oven safe dish and spread some enchilada sauce or salsa on the bottom. Most of the time I use salsa because I always have it around. Place corn tortillas on top for the base. enchilada casserole recipe

4. Layer shredded chicken, mushrooms or random veggie drawer item of your choice, salsa and cheese. Top with another layer of corn tortillas and repeat until the dish is full. layered salsa chicken enchilada casserole

5. Bake at 350 degrees until cheese is melted and heated through. Enjoy!

      I made chicken taquitos the same night you made this. They were so good, and sorta healthy cause I baked them and didn’t fry! Made an avocado lime sauce to go with it…yummy! I will have to try the enchiladas my husband would love them!

      Great quote and so true, I saw a picture of the Boston Marathon runners that said “You just pissed off a lot of people who run faster than you and never give up. Real smart.” Made me smile. This looks delicious. Any chicken I’ve ever made in the crockpot is always incredible, and then layering it with cheese and veggies, can’t go wrong!

      That sounds delicious! I’m a big fan of Mexican-esque food, so this is right up my ally. My boyfriend would also probably prefer this to the black bean tacos I’m always making!

      I was doing my taxes when I got home, so had no time to cook and ended up with a open face sandwich (thanks for the tip Monica!) and some cashew nuts on the side. Finished dinner with Cadbury Hot Choc drink.

      That reminds me of another quote I saw today:
      ‘If you are losing faith in human nature, go out and watch a marathon’
      The spirit of marathoners, and runners in general, is hard to beat. We train ourselves to deal with the physical pain, as well as mental hardship. Yesterday was one terrible and evil event, but the overwhelming response of compassion and support from both within and outside of the running community demonstrates that there is still good, love, and kindness in the world.

      For dinner, I had black bean, tempeh, and veggie stir fry over barley, topped with salsa and avocado. Didn’t even have to cook since they were left over from yesterday 🙂

      Why hello delicious!! I didn’t get in from running today until 8 and had errands to run so I was stuck having a grab and go smoothie for dinner. I had planned on having a this though: Chili Garlic Coconut Cream Delight- http://abetteryeartoabetterlife.com/2013/03/13/must-make-meal/ it easily my most favorite meal right now and it’s been a few weeks since I have made it!

      I love Mexican lasagna! Super easy to make, especially if you get prepared veggies. (I like to use packages of frozen fajita veggies.) Plus, it heats up really well as leftovers. I had Jimmy John’s for dinner–didn’t feel up to cooking, and I’ve been craving one of their sandwiches for a while.
