Happy Mexican Independence Day! Let’s have some cake to celebrate!

Soy Mexicana and this recipe features soy milk instead of the usual milks in tres leches cake.

I made a delicious dairy free Tres Leches Cake for my family on Saturday. I’m usually not a fan of tres leches cake but this one won me over! It’s not too ‘wet’ and the milk substitutes I use really take it to a whole new delicious level.

It’s super easy because I’m more ‘semi-homemade’ then ‘from scratch’ and use a box cake mix for the cake.

Tres Lechese Cake – Dairy Free Recipe

Ingredients:

  • 1 box cake, prepared
  • 1/2 cup Silk Almond Milk
  • 1/2 cup Silk Vanilla Creamer
  • 1 cup coconut milk

Directions: Bake cake according to directions. *I baked two 8-inch round cakes and only made one Tres Leches in case the some people didn’t want it that way. If you only make one cake this style halve the liquid above.

Mix coconut milk, almond milk and soy creamer.

Let cake cool enough to carefully remove cake from pan (but not completely you want to add the liquid when it’s still warm). Poke holes in it with a fork or skewer.

Pour milks over the cake. Let cool and set in fridge. Overnight is fine.

Top with whipped cream and a cinnamon sugar sprinkle. Enjoy!

    I think I’m gonna try a boxed GF chocolate cake and use coconut milk, almond milk and the new Gevalia iced coffee with almond milk. Then chocolate dairy free whipped topping.

    LOL I love that: Soy Milk= I am milk in Spanish! Who knew!

    I usually don’t drink milk, though I sometimes cook with it. I prefer soy milk and almond milk. I also use coconut milk when making richer things, like ice cream.

    Just soy milk for the moment – I’m vegan and it’s difficult to get the other types of vegan milk here eg almond. There’s fresh coconut milk from the market but we use that for making curries.

    Looks so easy! I’m a huge fan of the semi-homemade too. I just have unsweetened vanilla almond milk in my fridge. Sometimes I get the dark chocolate kind (Silk, I think), which is freakin’ awesome.

    I just have plain o’ full-fat moo juice in my fridge, for the kiddo. I sneak it for my coffee, though 🙂 Occasionally I’ll have coconut milk, but usually I’m too cheap and lazy to buy special fake milk for my coffee when cow milk seems to work for me.

    I only have Silk vanilla almond milk in my fridge right now. I rarely have soy… maybe in a mocha once or twice a year. I usually just stick to almond, coconut, and hemp milk.

    I definitely struggled with this one just reading the title. Shook my head a little bit at the “dairy free” tres leches. . . but I think you sold me on this. Looks AWESOME, and I LOVE me some tres leches

      Coconut milk and creamer are still pretty indulgent so it makes up for being dairy free.

    i’ve never tried tres leches cake (at least i don’t think i have), but this looks delicious =)

    i normally drink silk pure almond, but i picked up unsweetened cashew milk last time i was at whole foods and i love it!

    I have soy milk and almond milk in my fridge. There might be cows milk in there for my husband. I had some coconut milk but used the last of it a couple of days ago. So many options!

    I have soy milk in the fridge- haven’t touched real milk in 18 months, and I have no plans to change that! Love soy milk 🙂
