Since I opened a BIG can of pumpkin for my Pumpkin Pie Chia Pudding I thought up a delicious breakfast or snack to make with the leftovers. I know the name “Pumpkin Roll” might conjure up images of fluffy cake rolled with cream cheese frosting… and this is NOT that kind of treat.
These Pumpkin Rolls are a healthy, super easy option for having your pumpkin and eating it too (without actually having any cake).
Healthy Pumpkin Roll Ups
Pumpkin Roll Filling: 1 wedge Laughing Cow, 2 Tb pumpkin, 1 packet stevia and lots of pumpkin pie spice. Mix.
Spread filling on a warm Toufayan Wrap (heat in microwave few seconds until wrap is pliable). These are better than tortillas because they are chewier and have a better texture.
Roll it up and spray with coconut oil or spray butter and sprinkle with stevia (or sugar) and pumpkin pie spice. Enjoy!

My TV obsessions right now are both new shows – Forever (LOVE!!!) and Z Nation (Cheesy Zombie Goodness). I’m also rediscovering my love for the drama that is America’s Next Top Model. I thought that show had gone off air. I’m glad I was wrong!
