Hello! While I’m off exploring the great Pacific Ocean I wanted to share a super easy and delicious recipe I threw together last week. It’s great for Meatless Monday or if you’re not into labels – it’s just a really good and easy lunch or dinner dish. This one pot dish only requires 4 ingredients and is vegan, gluten free and most importantly, tasty!

4 Ingredient Creamy Quinoa Recipe
Vegan / Gluten free / Delicious
Ingredients:
- 2 cups of quinoa cooked (1 cup raw cooked according to package)
- 1 can garbanzo beans, rinsed
- 1/2 package frozen peas (heads up – canned peas have added sugar)
- 8oz hummus (I used most of a 10oz Sabra hummus container)
Directions: Cook quinoa according to package directions. Mix all ingredients together. Season with salt and pepper to taste.

*Note: the scientific measurement of the ‘half a pack of frozen peas’ is because I ate the other half the day before when I got a random craving.
And some healthy eating advice…

Question: What are you having for dinner tonight?
Me: Hopefully some seafood on the cruise! And then epic dessert!!
I love easy recipes like this! Thanks so much for sharing!
This could get really interesting by using different Sabra flavors. Yum!
this sounds delicious!!
We had Lebanese takeaway, so hummus all round! 🙂
Not sure about tonite’s dinner but it’s lunch hour now and I’m having a PB sandwich.
I can never get my quinoa to come out right!!
This sounds easy and amazing and I {think} my daughters will eat it!! I’ll call it… Princesses Eat This You Should Too Salad!
this is really healthy. I’d have to have an epic dessert after a healthy meal like this. =) By the way dessert on cruises is calorie free. It’s like birthday cake and every other Monday too. =)
Haven’t had quinoa in a while, should bring it back. Love the nutty flavor!
Kind of love this. So simple! Have a drink for me in Alaska!
