Hello! While I’m off exploring the great Pacific Ocean I wanted to share a super easy and delicious recipe I threw together last week. It’s great for Meatless Monday or if you’re not into labels – it’s just a really good and easy lunch or dinner dish. This one pot dish only requires 4 ingredients and is vegan, gluten free and most importantly, tasty!

4 Ingredient Creamy Quinoa Recipe

Vegan / Gluten free / Delicious

Ingredients:

  • 2 cups of quinoa cooked (1 cup raw cooked according to package)
  • 1 can garbanzo beans, rinsed
  • 1/2 package frozen peas (heads up – canned peas have added sugar)
  • 8oz hummus (I used most of a 10oz Sabra hummus container)

Directions: Cook quinoa according to package directions. Mix all ingredients together. Season with salt and pepper to taste.

*Note: the scientific measurement of the ‘half a pack of frozen peas’ is because I ate the other half the day before when I got a random craving.

    this is really healthy. I’d have to have an epic dessert after a healthy meal like this. =) By the way dessert on cruises is calorie free. It’s like birthday cake and every other Monday too. =)
