Meatless Monday– Winging it Lasagna

I am usually super hungry the day AFTER a long run and today was no different. Only an hour after breakfast my stomach was growling. I decided to have some healthy fats and protein in the form of a Larabar (from the expo) and a Babybel cheese. I don’t think I have tried these Babybels before, and I LOVED it.

I shouldn’t have went shopping hungry because I am prepared to feed an army now! Oh well. Anyways, my overboard shopping trip meant something from the freezer had to go! As a Lean Cuisine pizza came tumbling out of the door I decided that would be lunch.

Now you can see how BIG my salad bowls are – twice the size of a frozen pizza! That’s how I roll salad.

Since today was a hungry day lunch required dessert times two…IMG_6661

and a healthy dose of PB that I added post picture.

I had to buy ricotta cheese for my French Toast Cups recipe, but only used 1/4 cup of it. Now I had an almost full container of ricotta and a ridiculously huge container of cottage cheese (apparently this shopping while I’m hungry issue is worse than I realized). IMG_6665

Anyways, what do you do with that much smashed cheese product?!?!

Make a lasagna of course! IMG_6686

I didn’t look up a recipe because I wanted to create my own lasagna with the things I had to use up. So, this is my impromptu vegetarian lasagna recipe…

I mixed a package of this (minus 1/3 cup serving) and a jar of pasta sauce.

In a separate bowl I mixed the 150z ricotta with 15 oz of cottage cheese (estimated) and about 4 chopped basil leaves. I seasoned this mix with garlic powder.

Then I layered the lasagna noodles, cheese mix, sauce mix and shredded cheese…

Run, Eat, Repeat until all the mixtures are gone. Top with shredded cheese.

And pop this in the oven at 350 degrees for 45 minutes.

Serve with a salad because you were going to add layers of veggies to the lasagna but got too lazy.

I promised myself I would get a few more things crossed off my To Do list before tomorrow, so I’ll see you in the morning!

Luckily, one of the things on my list is “Eat Dessert”. Okay not really, but it’ll still happen Winking smile

      I love those babybel cheeses – we buy them in bulk because we go through them so fast!

      Great looking lasagna – my husband and I are in love with meatless crumbles.

      There is a studyout now that is being mentioned in all the magazines (Shape, Oxygen, fitness, etc) that exercising doesn’t make you hungrier. In the study, people walked for an hour and then went to an all you can eat buffet and they didnt eat more than people who did not exercise. I just find this study stupid (or poorly implemented) because I am never hungry right after I exercise (unless I was already hungry). Like you, I am hungry the next day (or much later in the day). I know that if I exercise right before a party, I won’t be nearly as tempted to eat too much. That exercise hunger comes much later. I keep getting annoyed each time I read this. They should have had the participants do more than just a walk and then rate hunger at multiple time intervals later.

      My husband and I have a strict rule that at least one person must be NOT HUNGRY in order to go food shopping due to waaaaay too many of those experiences. The lasagna looks great – I love how some people (not Ben!) assume vegetarian has to include stuff like tofu and they don’t even realize yummy meals like this can be meatless.

      BTW couldn’t remember if I mentioned that I made your 3 Layer Casserole and hubby and I were OBSESSED with it??? Like its one of our favorite dinners ever now. Thanks!

      My slad bowls I make are huge too, its the way to go!

      Lasagna is so yum, my gram used to make the best! THis looks good and go you for just winging it and no recipe to follow!

          they are a no-boil, ready to use noodle, the brand is DeBoles. they work great – soft like a normal noodle and tasted good! 🙂

      How does that peanut butter taste? I almost bought some last time I went shopping because the nutritional stats are great (and the ingredient list impressive) but I was afraid it would’t really taste like peanut butter.

        I like that PB now, but the first time I bought it (over a year ago) I did not like it at all 🙁 I guess I got used to it.

      I love your big salad bowl! My salad never fits into regular bowls either. I usually end up using a big tupperware container. Classy!
