Chickpeas and Eggs Salad Style

I’ve mixed cooked chickpeas and eggs together before with this delicious recipe –

Chickpeas and Eggs (I know, you’re impressed with the originality of the name.)

And today I combined the two again, but this time it was on a salad. In the mix: spinach, onion, tomato, chickpeas, one hardboiled egg with S&P topped with hummustard dressing.

I love these ingredients individually and can’t believe it took me so long to combine them!

Who knew a bean and an egg could get along so well?

On the side – Vitatop and an apple 🙂 Simple, satisfying and delicious.

    Greek yogurt and frozen fruit blended together is super yum.

    Nut butter and jam, nut butter and chocolate, nut butter and banana. Or maybe just sort of nut butter on a spoon? 😉

    Watermelon and feta cheese. It sounds odd, but the saltiness of the feta is perfect with the watermelon. I’m going to try the chickpeas and egg for lunch tomorrow.

    Good idea! I was just going to put egg whites in my salad tomorrow but I have some leftover beans…Hmmm

    my favorite combination is toast with greek yog. on top!

    Since you posted your original Chickpeas and Eggs combo I am obsessed with it and make it all the time, everyone I tell thinks it sounds gross but it’s so delicious and filling! So many good combos, I love greek yogurt and fruit!

    I love chickpeas and I love eggs but haven’t had the two together. Looks good! I love pinto beans and eggs. YUM! Huevos rancheros is my favorite dish ever.

    My favorite food combos include bananas and nut butter, cheese and basically any veggie, and Greek yogurt and fruit!

    That salad looks awesome. I will have to give it a try. I recently discovered that I love chickpeas and need to find more things to use them in!
