Cranberry Protein Bread Recipe

I don’t know why, but I shop for food like I’m a Duggar. Apparently feeding a marathon runner (me) is similar to feeding a house full of teenage boys.

That also means I often have massive amounts of the most random ingredients. A while back I bought 26 pounds of dried cranberries from Costco and I’ve been mixing them into everything. Remember that Coconut Rice – yep, even there.

So, I’ve been thinking about making cranberry bread for a while and finally got to it. This is is a healthy version of the holiday staple with protein powder and oat flour. That makes it great to eat everyday as a snack slathered with some almond butter…

Cranberry Protein Bread Recipe

{high protein, gluten free if using g-free oats*}

Ingredients:

    • 1/2 heaping cup oats, blended to make flour
    • 1/2 cup protein powder (vanilla or strawberry)
    • 1/4 tsp salt
    • 1/2 tsp baking soda
    • 1-2 Tb. stevia or sugar *My protein powder is very sweet so you can add more or less depending on your powder.
    • 1 6 oz. container strawberry or cherry greek yogurt
    • 1.5 Tb. coconut oil or melted butter
    • 1 egg or 1/4 cup egg whites
    • 2 Tb. almond milk
    • 1/2 tsp vanilla extract
    • 1/3 cup dried cranberries

Directions: Heat oven to 350 degrees.

Mix dry ingredients – oats (blended to make flour), protein powder, salt, baking soda, sugar.

Add in wet ingredients – yogurt, oil, milk, vanilla and eggs. Combine. Add cranberries.

Pour into well greased baking pan. There is not a lot of oil in this recipe, so grease it up!

Bake for 15-25 minutes or until done.

    This is the first time I tried a recipe I found on a blog – and it was really yummy! (Although it didn’t looks so great – it kinda has a greenish color, maybe from my protein powder or something?) Either way – it was delicious! thanks! 🙂

    Hi Monica,
    I live in Spain, and here it is difficult to find proteins powers with neutral flavor and able to bake. Since i’ll be in the States next week, i wanted to buy one but i dont have a clue about brands. Could you please tell me what kind of protein power able to cook and neutral should i buy? Thanks a lot!!

      Hello Maru! Most of the time I use a vanilla whey protein powder. Health foods stores have the most variety, so I would suggest you check Whole Foods or Mother’s Market (or similar). For whey, I use whatever is around. If you were avoiding whey I’d suggest Vega, Jay Robb or Spirutein.

    26 pounds! Wow, I’m not sure I would be able to polish those off. Regardless, I would by 26 pounds of cranberries if it mean’t making this recipe. This bread looks amazing!

      It’s a small loaf pan, around 4×8 ish in size.

    Do you find that this bread is really dense? I’m just wondering… P.S. Do you have a Bruegger’s Bagels near you???? Idk if they’re just an east coast chain or PA chain but I was in one the other day and they had a poster up for their new Siracha and egg breakfast sandwich and I couldn’t help but think of you! 🙂

      Yes, the bread is pretty dense and does’t rise very much (you can kinda see that the pieces are not tall). Using protein powder and oats as opposed to white flour keeps it from being light and fluffy like a dessert bread.

    Looks delicious! Thanks for sharing! I am guilty of the same thing- I buy staples in ridiculously large quantities. In my pantry right now you will find at least 6 bottles of coconut water and 5 jars of PB.
