How was your day? After probably 4 hours of sleep total this weekend, I finally got the best night of sleep of my life and woke up feeling great! Hey, I’m not complaining – it could have been worse!

I tried to be productive since I had a special day trip on Thursday (!). More soon Smile

Since I was out of town this weekend I hit up the grocery store for a complete haul today.

I had the most intense craving for pineapple cottage cheese and HAD TO HAVE IT or it would be unpleasant for those around me. I go through long phases of liking something and just eat that for months until I get distracted by something shiny. I used to eat this all the time, not sure what happened but I’m glad it’s back.

Speaking of an “oldie, but goodie” – I used the leftover meat from last night’s nachos to make Enchilada Casserole.

Served up with zucchini and some guacamole on top (after the picture). Bottom layer is beans, middle layer is meat – with tortillas and enchilada sauce. Oh, and lots o’ cheese!

*Make this vegetarian by swamping meat for beans and mushrooms. I originally made this recipe for Mexican Meatless Monday.

      i never used to like cottage cheese until recently, but now i get the most intense cravings for it every so often. i love eating it with sunflower seeds and raspberries…odd combo, but it’s yummy 🙂

      whatcha dipping in that cottage cheese? pineapple is THE ONLY way i’ll eat cottage cheese.. not sure why, but that’s how I roll.

      I periodically attempt to get on the cottage cheese bandwagon but something about that texture just doesn’t jive with me… I wish it did, though, since it’s such a good-for-you snack!

      Yesterday’s dinner was meatful (if you want to call it “dinner”… more like Monday Night Football grazing…) and I picked at buffalo chicken something-or-other and mini italian hoagies all night. Ah, football season…

      I am all about pineapple and cottage cheese. I like putting my own together though. 1/2 cup cottage cheese to one of those cups of pineapple tid bits is the perfect ratio.

      I got through phases with foods too. I’ll really like something, and then there will be that 1 time that it didn’t taste too good to me and then it will be ruined and I won’t eat it again for a long time.

      Meatful Monday. Definitely, we grilled up a chicken sunday night and I had that for leftovers today with brussel sprouts. Yum

      Never tried pineapple cottage cheese, but I am sure I would love it since I love sweet and savory combos. Today was meatless- not intentionally… I just only eat it when I specifically crave it.

      Whoa. I didn’t even realize, but today was meat-less Monday. By what I have in the fridge until I go grocery shopping, I think it everything will be meatless until Thursday!

      Oh my Lordy you had to say pineapple cottage cheese. I completely forgot about that amazing food combo! I must go to the store tomorrow so I can indulge! I usually over indulge on my favorite foods to the point where I can’t eat them anymore–but it is nice to rediscover my love for them!
