Instant Granola Recipe For One

Hello! I feel like I’m either super on top of life and meal prep and cook and bake like Martha Stewart OR I eat out every meal a la Man v. Food. There is no moderation up in Monicanland. Well, this weekend I created a granola recipe for one that you can make in the microwave and am pretty proud of myself!

First, I made some pretty delicious enchiladas. It’s so easy!! I just filled a few Gluten Free Toufayan wraps with leftover chicken and pico de gallo. Wrap it up. Top with enchilada sauce and cheese. Bake until melted.

And now let’s talk instant easy granola for me one.

I’m super super excited about this granola discovery – it is one of my favorite foods! I feel like loving granola is a very random (almost disappointing) favorite food but I cannot control myself around it! I always put a ton on my fro-yo more than any other topping.

Instant Granola Recipe

Ingredients:

  • Packet Brown Sugar Oatmeal
  • 2 tsp melted butter
  • cinnamon, salt
  • optional: raisins, nuts

Directions: Mix melted butter, oats, cinnamon and salt in a bowl. (Basically smash it together.) Microwave for 1 minute. Stir. Microwave for an additional 1-2 minutes, until it seems like it’s getting dry/crisp. Let stand for at least 5 minutes to finish getting crunchy. Mix with dried fruit and nuts. Enjoy!

*Tip: Wait to add dried fruit until after you’ve microwaved it.

I did a couple trial and error test runs of this and made a batch in the oven too. That baked on a sprayed baking sheet at 300 degrees for 15-20 minutes and then let sit to cool and harden for about 10 minutes.

Put it on yogurt or ice cream or eat as cereal. Enjoy!

    Granola looks awesome and I love the recipes for one! I just perfected my single-serving biscuit recipe and it might have been the greatest day of my life.

    I have just started to eat granola and this looks tasty! Thanks for sharing! As far as toppings I love strawberries, brownies, and anything chocolate. I love chocolate!

    I love this! Granola is so good but I just eat it all in like, a day, no matter how big the container. one serving would be good for me..

    Oooh…I have some peaches and cream oatmeal packets- I bet those would work??

    I don’t go out for ice cream often but when I do I have to have sprinkles. They don’t really add taste but sprinkles just make ice cream even more fun to eat!

    I can’t believe I’ve never thought of making my own.. The boxes are so expensive at the store and I don’t eat it often enough so it gets stale after sitting in my pantry for a month. Thanks for sharing!!

    Favorite froyo topping – COOKIE DOUGH and rainbow sprinkles! I always feel healthy eating froyo until I empty the cookie dough container and they have to refill it for the people behind me

    I love granola on top of regular yogurt but not froyo. Since I feel like froyo is the healthier version of ice cream,it’s my duty to make up the calories in other toppings like reeses cups! 😉

    Hey I thought you’d find this amusing- so I wake up at 3 am and saw this red stuff by my mouth on my sheets. And I’m like holy cow I’m bleeding! But apparently it was the jelly from the PBJ that I had consumed while kind of asleep in my bed at 1:30 am… I Think I may have eaten it sideways laying down 😛 #notashamed

    oooo love granola! My fro yo toppings though? usually sugar packed cereals, candy, maaaaaybe a raspberry or blueberry here or there, but mostly sugar and chocolate.

    I LOVE granola too! To the point why I can hardly buy it for fear of eating it all IMMEDIATELY. On froyo, though, I can’t resist when they have those little mochi pillows…

    That granola looks great – I”ll have to try out the recipe. Reese’s peanut butter cups are my favorite fro yo topping. And I hate the places that have the fake version of Reese’s!
