My first Health Coach Package and Waffle Love

Fun· My Life

Hello! Today is a rest day for me so when Skinny Runner aka my only friend texted me asking if I wanted to take a walk I was all about that life. She brought Marni and some contraption with wheels to hold our phones and water bottles. It’s like a wheel barrow, but better because people can ride in it too. But, she refused to push me. Selfish.

I was super excited to come home to a package from the Institute for Integrative Nutrition. The first session is starting soon (in July) and I’m just really excited about it. I feel like this is what I should be doing right now and it feels good. Luckily the cat in my life supports my goal.

In Throwback Thursday news (kinda) I had a craving for frozen waffles and picked up a box of Van’s gluten free ancient grains waffles. They are delicious with a hint of sweetness. Love ‘em. I made a waffle sandwich with eggs, salt and syrup. There is nothing like a good salty/sweet combo. I feel like a year or two ago I would have frozen waffles with PB before every long run. Then, I forgot to buy them one time and haven’t had them since.

If you don’t have waffles in your home right now, I’m sorry. But you can try my French Toast Waffle Recipe.

Question: When was the last time you had waffles?

I go through phases where I like one thing every day for 10 years and then move onto something new. Anyway. It’s been too long.

Is there any way you could send me some information about the program? I’m thisclose to actually applying for it, but I want to make sure I’m making the right decision. I’d love to become a certified Health Coach.

I was really concerned about you doing this nutrition thing, but when I saw that Vegas supports it I realized that I have nothing to worry about 😉

I’m not a waffle fan so I can’t even tell you the last time I ate one. I’ll choose pancakes over waffles or French toast. I’ll actually choose eggs benedict over all of the above.

I eat waffles occasionally at home, but what I really like are the huge monstrosities you get at places like Polly’s. Sometimes I’m tempted to buy an iron for home, but they seem like a bitch to clean.

I remember when my package came from IIN! I think that you will be really happy with the program! Its personally been so incredible helpful, but to think that i will be able to have a career in this in beyond anything I would’ve ever dreamed of!

Last time I had a waffle was actually yesterday! My host family bought a waffle maker, score!

I was just in Provo, UT last weekend and there is a place there called Waffle Love. It was freaking fantastic and I will be dreaming about their waffles for a long time!

I tried to make a “paleo” waffle (<– unsure why I just put paleo in quotes, it really was paleo) which stuck to the waffle maker and ended up just sitting on the floor for an hour trying to scrape off what I could. Soooo that's not even really a waffle. It's been too long.

Is there paleo ‘bread’ that you can dip into egg and put in the waffle maker to crisp?

I had a Belgian Waffle the size of a large plate at a fancy restaurant a few weeks ago. It was sooooo delicious, but I won’t be going back. I don’t think the patrons or staff were used to seeing someone lick the plate. Whatever.

I love waffles. It is one of my favorite things to get at IHOP. Now I live in the city though and I can only go to fancy waffle places. It’s not the same.

I had a waffle today. My awesome sister in law makes them for me a dozen at a time in her waffle iron and freezes them so I can pick them up whenever I need. She is my waffle pimp. 🙂

I completed the IIN training in 2012 and am so very happy with my decision. You will learn a lot not only about health, but also about yourself during the next year. Enjoy the journey!
